Xanthan Gum is in everything as thickener but also as an emulsifier. Thats fancy talk for the agent that lets you combine oil and water. Without it the oil and water separate and your sauce "breaks".

I like to make sauces with a base of blended soaked cashew and water (about ½c cashews to 1c water), super simple and eliminates the need for oil and xanthan gum since cashew cream doesn't separate and has its own fat; I may just drop the yogurt/mayo/buttermilk and throw your spice blend in my cashew base! Perfect use for the Garlic Buffalo Frank's Red Hot I just got.
Do you have any substitution suggestions for the Greek yogurt? I have not made this exact recipe but another ranch with Greek yogurt and I can't seem to get rid of the Greek yogurt taste. I've tried another sauce as well that has the same issue. Thanks in advance!
Amazing sauce, thanks for the recipe! Quick side note, I DO NOT recommend the sauce bottles that are linked in the description. The sauce is too thick to pour out of the tip. I also used the same bottle for the garlic butter that goes with the Domino’s cheesy bread. The grated Parmesan is too thick, stopping the oil from dispensing. They will be great bottles for thin liquids, I’m sure I’ll use them at some point.
This is similar to the one I came up with but I used fire Taco Bell sauce instead of Frank’s and a little smoked paprika because I detect some smokiness in their version. They sell the Taco Bell sauce by the jar at my local supermarket.

3:04 xantham gum is a stabiliser, like modified cornstarch. 0.5g is perfectly fine in so much sauce. Problems start when you are volume obsessed and you add 5g of it so you can make a gallon of pseudo ice cream. Then it becomes a laxative and will absolutely destroy your digestive system
Would be great if you could do a recipe for a low fat mayo using xanthum gum. Don't have that option here. Appreciate it. I've not seen this done anywhere.

I would just replace the ingredients to how you want to use it. Recipes ate suggestions, so instead of using low cal mayo, use whatever mayo you have in your fridge, etc ;)
I just tried this with the substitutions but I don't think the substitutions work for some of these. 3g of fresh garlic to 3g of garlic powder. 3g of garlic powder would be about 2 tsp which would be equivalent to 16 cloves of garlic. The 2.5g fresh parsley would be .8g of dried parsley. I tried with the 2.5 g of parsley, way too much!

Is there even something like high fat buttermilk? They are basically all 1.5g/100g here. Also I see Hellmann's has different mayos in USA. Here in EU you have normal one, 700+ kcal per 100g, light one 280kcals/100g, I use this for salads, burgers, dressings, and there's something called Lighter Than Light which is only 68kcal per 100g, with like 2-3g of fat per 100g, so in the USA would be labeled "fat free"

another way to get it from bowl to bottle is to first put it all in a ziploc or piping bag etc, cut a corner, then squeeze it into the bottle.

Where do you find the low fat mayo? I only find the light mayo and it’s slightly higher in calories
If thats all you can get I would still use it. It only adds 10 calories per serving. Still 100+ less than T Bell

Made this tonight! I put it on Remington’s anabolic fajitas and it was great! Could not find the habanero. But it was phenomenal without it.

You can do a mix of one part milk and one part greek yogurt from what I understand. Although i have never tried it personally in this recipe
