Hi David, looking at your new videos I see you dont use a hop spider any more and throw them into the boil with whirlpooling at the end. Did you see less hop utilisation with the hop spider? I bought one but am on the fence about using it!
Hi Paddy, I used a spider early on with the GF to see the difference it made. Utilisation was the real difference, a 10% loss on average. A whirlpool or use of a false bottom works better. Hop spiders are useful for candi sugar additions though.
Would you have a suggestion as a dry yeast alternative to the wyeast 1275? My local home brew store has a limited selection of liquid yeast, sadly no 1275. Also, would you suggest the 20 C fermentation?
Great video! Thanks for sharing! I'll make this beer, and the only thing I'll change is probably the music haha! Do you ever boil with the pump on? Maybe you could put the wort hose down in the hop spider for better usage of the hops? Ever boil with the lid on?
+Sune Faurschou Hey Sune :) Boiling with the lid on would really get you a boil over and thats the last thing you need. There is no need to have the pump on during the boil just give the hop spider a good stir and all will be fine.
Thank you Sir! I just loosing so much during the boil. Would it be ok to lower the temperature to 99C so it won't boil like insane? Another question: I'm just watching your "BREAKFAST STOUT BREW WITH THE GRAINFATHER 4K HD" for the 3rd time (because I'll go shop for it tomorrow), but why are all the measurements so 'odd' (like 92,39 grams of chocolate and not just e.g. 100grams)? Thanks again! Your videos are very very very helpful and entertaining! Do you think I'll get the same brew result if I change the music ... ? :-)
+Sune Faurschou With the boil temperature it really depends on your actual boiling point. I live in Bergen, Norway and my boiling point is 99 , so ive set that in the gf app and at 99 my boil timer starts. Sounds to me like you should do the same. The breakfast stout has been fine tuned for the best results. Round numbers look nice but aren't always giving the best taste :)

Is your recipe an interpretation or it's the ''Official'' clone recipe ? In the BYO 250 classic clone recipes magazine they're suggesting Marris otter, Crystal 75L and few english chocolat malt ... My personal recipe has Marris otter, Crystal 60L, Carapils, Rye malt and some carafa Special III. Wort tasted delicious though !! Will bottle in few days.
this is a bit different to the recipe I use which came from an interview with the brewer. That recipe is not quite spot on, so I may give this one a try next batch. What yeast do you use.
You don't have to use Star San at this stage, as a matter of fact your pretty much just wasting Star San. Just good quality water in a spray bottle will suffice. The boil stage will kill off any contaminates as you will be boiling the wort for 60-90 minutes.
+Brad Mckenzie-Smith I know this Brad but I always have a spray bottle of starsan to hand and dont see the need of another spray bottle. I come from a commercial brewing background where things like this aren't usually a concern but the keep it simple approach to brewing still applies :)

Wouldn't it be better to initially mash at 65 C for at least 20 minutes and then bump it to 69 C? Just to provide better fermentability? Any other changes you suggest to this recipe after your past 6 years of epic brewing? I'm absolutely crazy about Hob Goblin Ruby! For once in my life, I wish I can brew a version identical to the original masterpiece.
No problem. 69 is a common mash temperature when you are looking for the body desired by such a beer. Sure you can mash this at 65 but it will not be as close as a clone.

You could try WLP023 Burton Ale Yeast. Alternatively any British ale yeast but it will not be as close.

This is pretty much the breweries recipe adapted for homebreew. Try it and see what you think :)

Why would you spray starsan at the foam as it starts boiling?
