When making garnishes, it is always best to use the freshest fruit available. This prevents it from leaking too much liquid. Keeping it cold(refrigerated) before handling can also help. Another tip is to make the garnish and immerse it in ice cold water for a 2-3 minutes. This also helps keep it fresh longer. 🙂
