    My question is how do you know the quantity of palm oil to use? Palm oil is one funny kind of oil, it expands when heated.

      You can do away with it but it really does heighten the flavours.

      No. Iru is what makes this dish local. Iru is mostly for local dishes, soups, etc…
      Iru has no business in party jollof rice

    Pls what is iru in igbo? You keep using the word iru, I'm an igbo girl and I just get lost at that iru word. So fill me in biko

      It's fermented locust beans. It's different from our ogiri isi.

      Ogiri okpei or dawa dawa can be used but you should chop or break it into pieces before you fry it in the palm oil. It's all delicious!

      She said she discarded the stock. It's possible the blood keeps oozing out and the only way to drain it is to cook it first. It's just like liver, until you cook it, the blood just keeps oozing out.

      Lol. That is natural leakage from animal parts. It isn't unclean. She discards the initial stock because it will have a metallic flavour from the iron-rich offal which can negatively affect the flavour of the finished dish
