I made 40 of these for my family in Mexico. They loved them. My dad was from Mayaguez so I love to prepare Boricua food for them because I'm proud of my bicultural heritage.
Can’t wait to make these. I made the alcapurrias today and it was phenomenal. I would recommend anyone making this, use a slotted spoon or a spider strainer. For the alcapurrias, I take parchment paper and smear a couple of drops of achiote oil before placing my masa on it. It helps for the alcapurria to slide off, and if not, you can drop the entire thing with paper into the oil and remove the paper once it dislodges.

I made these (Relleno De Papa) with my parent 50 years ago by rolling the potato ball in eggs (acts like a glue for the bread crumbs) then roll in parmesan bread crumbs and fry them until you get the golden color. (Make sure to use the big spoon to put them in hot oil, safety first). We eat them for Dinner time or Sell them at Humboldt Park in Chicago for a dollar. Every family including gangs and bikers loved them. RESPECT

OMG, I haven't had these since I was a little girl at the beautiful beach in PR when visiting my grandmother. I really miss that beach and those rellenos.
At home I put all my dry ingredients flours and corn starch in wide mouth glass mason jars and pack it down tight. Fill up the jar nicely pack tight put a clean coffee filter and put the mason jar lid and the wide mouth Foodsaver jar sealer adapter attach the hose to my Foodsaver vacuum sealer. And vacuum the jar closed. Then I shut off the the Foodsaver remove the hose, and adapter and the lid is sealed tight. Then I put the ring on the mason jar. All my dry goods, pasta, flour sugar, salt, cornmeal etc are vacuumed sealed in jars and looking pretty in my rack pantry. I love keeping everything nice and neat. I’m a little OCD. No boxes in my pantry. It keeps everything nice and fresh. When I use it everyday, I just put a lid on the jar and the white cap lid that goes with it. I still keep a crushed coffee filter inside. It’s also easy to put big spoon inside to measure cups when using for recipes. I’m a neat freak.

a tip, if u put the papa rellena on the spoon and drop it in the oil slowly the oil won't spatter as much, and u won't be in danger of burning😆

At home I put all my dry ingredients flours and corn starch in wide mouth glass mason jars and pack it down tight. Fill up the jar nicely pack tight put a clean coffee filter and put the mason jar lid and the wide mouth Foodsaver jar sealer adapter attach the hose to my Foodsaver vacuum sealer. And vacuum the jar closed. Then I shut off the the Foodsaver remove the hose, and adapter and the lid is sealed tight. Then I put the ring on the mason jar. All my dry goods, pasta, flour sugar, salt, cornmeal etc are vacuumed sealed in jars and looking pretty in my rack pantry. I love keeping everything nice and neat. I’m a little OCD. No boxes in my pantry. It keeps everything nice and fresh. When I use it everyday, I just put a lid on the jar and the white cap lid that goes with it. I still keep a crushed coffee filter inside. It’s also easy to put big spoon inside to measure cups when using for recipes. I’m a neat freak.
