Heck, maybe George Lucas didn't know that "vader" is actually Dutch and maybe he decided that having "vater" would be too obvious as a reference to German (and thus to Nazism). The force as a religion was all but purged from the galaxy. An entire generation had grown up with it being outlawed after existing for over 1000 years.
