Lau Shukto | Easiest Bengali Shukto Recipe

  • Lau Shukto, or shukta, made with bottle gourd, is a mild, creamy, Bengali appetiser served for lunch. Shukto is not just one dish. Like Bengali dalna, or ghonto, it is a type of preparation. Shukto usually has a bitter element-achieved sometimes using bitter vegetables, at other times through bitter spices such as methi (fenugreek) or mustard. But it is always mild (never hot, sour, or spicy) and usually creamy-that comes from either milk, or poppy seed paste, or mustard paste. Shukto is always served for lunch. This is one of the easiest shukto recipes out there.

    I made this version of shukto, today morning and I have to say it was mighty impressive. Loved the recipe. I kinda oversalted the "Lau", whilst steaming, the only bummer here 😣 but the recipe is "Oshadhoron", rather "Awe"-shadhoron".

      That's wonderful to hear! Thank you so much for letting us know. And yes, it is best to be conservative with the salt while steaming, because once it has been absorbed in the vegetable, it is difficult to get it out--so you end up with salted lau and an undersalted gravy! While steaming, you need to add just enough salt to draw moisture from the lau; the rest can be added at the end. Pinning your comment so that others might find your experience useful.

      @@BongEatsI disagree about “under salted gravy”. The steaming juices carry enough salt into the gravy. This recipe would be great with just the initial 10g salt; adding 12g later was a huge mistake and I wish you would admit it rather than try to justify or pretend there’s no mistake. Yes I’m the one who trusted you all and added what I knew was a scary amount of salt, but it’s still frustrating.

    I followed your recipe and then showed pictures to my aunt who suggested adding some roasted panch-phodon (ground saunf, jeera, kalonji, rai, and methi seeds). The panch phodon was an absolute game changer. Took this to another level altogether.

    My dadu used to make similar recipe and feed us before any exam. It's light for the stomach and healthy. But didn't know that it's a type of shukto as well. Darun.... will make it for sure🙂

    Thanks for the beautiful recipe. Though we don't get very 'kochi' lau in Mumbai, the recipe turned out a winner. Maybe a little coconut milk will take it a notch higher. Thanks again.

    My only idea of Shukto hovered around bittergourd+veggies+bori+post/mustard paste. This Lau Shukto was a revelation for me. Thanks so much. Keep going.     very delicious preparation. i like my shukto more bitter, so add some shorse paste with poppy seed paste and tempering the oil with methi seeds😊😋

    I have a somewhat similar receipe by omiting the posto and adding radhuni along with mustard seeds and replacing bay leaves with curry leaves. Actually it was my desperate move to prepare something homely when i was feeling home sick living in Mumbai and did not had all ingridients at my disposal but to my surprise it turned out to be great and still one of my favourite dish for luch.

      Depends on what you like or have on hand. We’ve used plain biulir (urad) dal boris.

    Hi Insiya, your gorgeous way of vegetable chopping has inspired me a lot. I am adept in cooking, nevertheless too reluctant in vegetable chopping. The jugolbondi of your knife and chopping board is truly encouraging.
    I have prepared most of your recipes. Each and everyone is unquestionably authentic.
    I stay in Bangalore and really don’t get good quality bori here. Tried making bori in microwave, but didn’t turn well.
    It would be really helpful if you could make a video on how to make bori. even you can guide me with the temperature setting of the microwave oven in the message box.

    Uff how yummy and thanks for helping me become a better cook. While I have almost similar learning’s from my grandmother as she was from Chanpur and Faridpur but as you know time takes away those learning . So grateful for helping me remember all those wonderful recipes. I did a little twist here. Followed all your process just added chalkumra too. It tasted just amazing

    I do with radhoni phoron, with out adding Posto bata and milk.
    Only Bori,holud, ginger paste, salt and sugar, Lau and wheat slurry at the end to make this soft and mushy. cook in mustard oil.

      +Sanchari Sanyal হ্যাঁ। কাঁচা পেঁপে দিয়ে করতেই পারো। পেঁপেটা পাতলা স্লাইস করে কাটতে হবে (লাউয়ের মতো সরু নয়)। ওটাতে বড়ি না দিয়ে ডালের বড়া দিলে আরো ভালো হবে।

    Beautiful. This shows how varied Bong cuisine really is and we are not at all about macher jhol and bhaat (the traditional misconception about bengali cooking) and that we can cook vegetables other than potato in such variety of ways. Lovely! :)

    That Lau shukto looks yummyilicious😋... Ant time to drool for with hot steaming rice. Loved the bori frying part.... Looks so crisp in videos that i probably may just make choto posto bori bhaja with Daal. U guys r making me fall for the Bengali food again... But I have a question here.. U guys mentioned it as Shukto... Usually what I have had in Shukto is like mix of few veggies with bitter gourd. Isn't bitter gourd an essential part of shukto? Also is Lau shukto made with out the bitter gourd? I really have never had a chance to have Lau shukto so I m pretty ignorant about it. But this version that u guys made is what I have heard my mom calling Doodh Lau. Almost similar recipe and my fav too😃😋😍
