벌크 파멘테이션을 shaping 전에 2시간정도 50-70% 부풀린후 shaping & final proof 하셔도 되고 이부분을 생략하고 Shaping 후에 벌크 파멘테이션 (final proof) 하셔도 됩니다 (이경우 발효 시간을 줄일수 있어요.
