First time making Chicken Adobo (“Original” & Creamy version)

  • [More of a “taste test” than a “how to” - although the recipe is down below]
    The first time cooking this well known filipino dish, I know everybody has their own take on the dish. So I just picked ones that looked interesting, it turned out better than expected, and I am for sure going to use the recipe in the future.
    ---------------------------------
    Batch 1: Chicken Adobo "Original"
    - 1/2 kilo chicken (3 chicken thighs + 2 drumsticks)
    - 3/4 cup Soy sauce
    - 1/2 cup Cane Vinegar (white vinegar)
    - 1/2 cup Water
    - 1 piece/tbsp Chicken stock
    - 6 cloves of Garlic, Crushed (remove skin)
    - 2 cloves of Garlic, Minced
    - 1 Tbsp Sugar
    - 5 Bay leaves
    - 1 Tbsp whole peppercorn
    - 4 Tbsp cooking oil
    ---------------------------------
    Batch 2: Chicken Adobo "Creamy"
    - 1/2 kilo chicken (3 chicken thighs + 2 drumsticks)
    - 1/2 cup Light soy sauce
    - 1/4 cup Dark soy sauce
    - 1/2 cup Rice vinegar
    - 1/2 cup Coconut Milk
    - 1/2 cup Water
    - 1 Tangerine or Orange, juiced (Calamansi replica : Lime & Orange)
    - 1 Lime, juiced (Calamansi replica : Lime & Orange)
    - 4 cloves of Garlic, Crushed (remove skin)
    - 2 cloves of Garlic, Minced
    - 2 pieces of Ginger, crushed
    - 5 Bay leaves
    - 1 Tbsp black peppercorns
    - 2 Tbsp coconut oil or 4 Tbsp cooking oil
    - (optional) 1/2 cup Green onions, Chopped

    Steps
    Batch 1- Chicken Adobo "Original"
    1. Make small indentations on the chicken.
    2. Add chicken to a bowl & add:
    - Soy sauce / Vinegar / Black pepper / Minced Garlic / Bay leaves
    3. Mix well & massage it into the chicken.
    4. Let it marinade for (30min to overnight).
    5. Heat up the pan and add the oil (medium to high heat).
    6. Add Crushed Garlic & Chicken.
    7. Brown the chicken on both sides.
    - (Optional) Add & Remove Chicken if you don’t have enough space in the pan.
    8. Add the water / Marinade / Sugar & Chicken stock.
    9. Put the fire on low cover the pan and let it simmer: 20-25min.
    - (Optional) add little water to submerge the chicken or flip the chicken half way.
    10. Remove the chicken add them to a bowl (large enough to also hold the marinade after).
    11. Set fire to high and boil the adobo sauce to it's reduced to your liking.
    12. Taste and adjust seasoning.
    13. Add sauce to the Chicken.
    14. Enjoy.

    My father usually use coconut milk in making adobo we call it adobado if i am not mistaken 😊 he use to boil it with kakang gata until it become oily or soak all the coconut milk on the chicken while cooking and after that he will cooked it again as the usual cooking procedure... Its tasty and amazing hope you try it next time...

    In some provinces, they do use coconut milk. I do like adobo with tons of chilis.

      I should look into that tbh, adding chili's sound good in it. Will try to make that this week (off cam). I have Sinigang added to my cooking wish list, will look in to it for sure.

    Nice! Achieved! hahaha... we like to add hard boiled egg in our CPA (chicken, pork adobo). but, my favorite is Chicken feet adobo. (not sure if you have tried eating chicken feet.) Good luck to you! adobo will definitely always be part of the menu..✌🏻

    That's the best with the adobo dish of the Philippines, that as long as there is soy sauce (preferably light soy sauce), garlic (any type and preparation), and vinegar (any type like cane, apple cider, etc.) with meat, crustacean, mollusks, or vegetable, or other meat alternatives then that's already adobo.
    It can be almost any kind of meat and meat alternatives (chicken, other poultry meat, pork, insects, worms, frogs, exotic meat, etc.), fish, crustacean (crabs, shrimps, etc.), mollusks (octopus, squid, snail, etc.), or even vegetables (string beans or long beans, other types of beans, spinach, water spinach, unripe jackfruit, etc.) appropriate for the dish, and any other ingredients like sugar (any type), honey, dried or fresh bay leaves, peppercorns (whole, cracked, crushed, or powdered), chilis or peppers (fresh, dried, flakes, crushed, or dried and powdered), star anise, ginger (fresh or dried and powdered), oregano leaves (fresh or dried and powdered), lemon grass (fresh or dried, or dried and powdered), onions (fresh or dried and powdered), coconut milk, coconut cream, squid ink, dark soy sauce, oyster sauce, fish sauce, salty or sweet or spicy shrimp or fish paste, anatto/atsuete seeds soaked in a little bit of water to add color, yellow ginger (fresh or dried and powdered) to add color and flavor and aroma, salt (any cooking salt), and any other cooking or culinary herbs and spices, food coloring ingredients, aromatic herbs and spices, and even some other condiments, stocks, sauces, bouillons, cooking or culinary preservatives, cooking or culinary sweeteners, cooking or culinary souring agents, and seasonings (powdered, liquid, etc.).
    I think there's no really a so-called real, true, authentic, original, traditional, or whatnot Filipino/Philippine adobo dish, for every person, ethnicity, city, town, province, region, family, clan, neighborhood, and household in the Philippines has its own version of the Philippine/Filipino adobo dish.
    I don't know where and when the very first-ever and original dish was cooked, why it was cooked, how it was cooked, who cooked the very first-ever and original dish, and what ingredients, condiments, herbs and spices, and seasonings were very first-ever and originally used. I just don't know too with other Filipinos, if and whether they truthfully, truly, really, honestly, validly, and accurately knew of any of the answers to these.

    Same with me mom. 😂 i love adobo but for some reasons i cant cook it. I can cook sinigang, tinola, afritada, mechado but i cant cook adobo. 😅

    Hello. Watching adobo made me hungry although like your mom I don’t know how to cook adobo. I’ve been thinking to try cooking. Like most of Filipinos we don’t like meat from the chicken.     Guys we call the one with coconut milk "adobo sa gata", gata is the tagalog word for coconut milk, it would be more delicious if the sauce will be thicken a bit.. Enjoy... 😊
