Cooking Pancit Canton - First time (Masarap)

- I love noodle and have eaten many variations of pancit canton (also bihon I think) from friends & family. So why not give it a go myself. Picked out a recipe ad did some adjustments while cooking. Recipe is down below.
PS: Needed to split in 2 woks because it was too much.

Ingredients:
- 400g pancit canton noodles
- 5 cloves garlic
- 1 medium-sized onion
- 400g cup chicken thighs, sliced into bite-sized pieces
- 1 medium-sized carrot
- 1 medium-sized red bell pepper
- 100g String beans or Baguio beans
- 1/2 cabbage, shredded
- 4 tsp soy sauce
- 4 tsp oyster sauce
- 2 cups chicken stock or 2 chicken broth block
- 6 pcs calamansi or 3 Lemon
- 5 tsp cooking oil
- 1 tsp pepper
- 1 tsp salt
Recipe:
1. Cut vegetables
- Cut Onion: Diced or Rings
- Cut Garlic: Minced
- Cut Beans: Sliced
- Cut the rest of vegetables Julliened (cut diagonally)
2. Put some oil (3 tbsp) in a wok.
3. Add garlic and onion until fragrant.
4. Add the chicken Thighs. Cook until it turns slightly brown.
5. Add about 1 tbsp of soy sauce and 1 tbsp of oyster sauce. Stir and cook for 1 minute.
6. While stirring, add vegetables one by one.
- carrots,
- red bell pepper,
- String beans or Baguio beans
- the cabbage. Cook until the vegetables are tender yet crisp.
7. Transfer everything from the wok to a bowl. Set aside.
8. On the same wok,
- pour the chicken stock.
- 2 tbsp soy sauce,
- 2 tbsp soy sauce, and oil.
- (optional) Add salt and pepper. Stir well.
9. Taste the broth before moving on (adjust to liking)
10. Add the pancit canton noodles
11. Cook until the noodles become soft and it absorbs the sauce completely.
12. Add everything from the bowl back to the wok (Mix well)
13. Done : Remove from heat and into bowl.
10. Serve with calamansi (if not available use Lemon)
Tip:
- Adjust the broth with sugar or sweet soy sauce (add more water if needed)

I enjoy your review with your 2 friends because they're so different that it makes the dynamic interesting. It's weird though that you're indonesian friend doesnt like spicy food because the rest of SE Asia including Indonesians jave spicy cuisines unlike Filipino food that tends to be salty or sweet or sour. The Philippines is the least spicy country in SE Asia

It looks delicious. Now I am craving with Pancit Canton. Pancit Canton, you can add more meat or dimsum in it like Chicken Liver or Liver alone, or fishball. Ph Pansit Canton is the best
