    More than a few decades ago, when I was in high school, I worked at a McDonalds. That was back in the days that they made fries in the store instead of them being processed in a factory, frozen and delivered to the store. We had Russet Potatoes in a 50 lb bag. A machine with sand paper like lining all over the inside that would spin around and peel the potatoes. Next step was to slice them with a slicer very similar to the one Kent used except it was mounted on the wall vertical. A fry basket under the slicer would catch the fries and the basket would be placed on a rack that held a bunch of fry baskets. Next was for each basket of fries to be blanched, very similar to Kent's first round of frying. The baskets would be placed back on the rack and moved to a convenient location to be easily grabbed and dropped into the vat for frying, then dumped into a bin, salted and served in a paper container. The oil that went into the vat said vegetable oil, packaged in a 3 gallon tin with a spout in one corner. The salt that was in the salt shaker came in a large bag and said French Fry Salt. Kent, you got pretty close to the exact same thing, just a little more love put into it that probably just makes em better than any McDonald's could ever do.

      McDonald's fries used to be so good. Now they are soggy and Luke warm.
      Kent's fries sound to hard crunchy instead of crisp. Maybe it's just the mic.

      Yeah as someone who worked at KFC back in the day, we made everything that day fresh except the little desserts. Industrial sized equipment effectively used and maintained by high schoolers. I was 15 at the time.

      I cringe when I see him use mountain dew though. Everything he makes seems somewhat healthy, then he pours modern poison dew in it. But I bet everything does taste really good.

    Double trying at low then high temps is a cook's best trick for crispy fried foods.😊 Can't wait to try this brining trick!

      Teresa with chunky chips par boil. Let cool then do the double fry. Best in beef fat

      After the first fry we freeze them in portions. Then when kids want them it's a 10 minute process to cook them.

    I always have beef tallow on hand. I save all of my hamburger and roast drippings. I gave up pork. So, I use it in place of lard for frying. Just got to keep it sealed in the refrigerator. This recipe looks great. I'm definitely using it the next time I make fries.

      My hubby and I raise beef cattle. Our freezer always has beef. I keep my drippings as well. Food taste so amazing. I love gravy with a lot of food. My gravy is amazing

    In the mid-1960's, I was in the Cub Scouts and we got a tour of the new McDonalds in town. We started in the back room where there were huge piles of potatoes. They don't make them by hand anymore. Your version looks way better than the current McDonalds fries.

    Hi Cowboy Kent, first time buyer and user of a Lodge 12inch skillet. I sanded per your instructions and then some. First coat avocado oil followed by three flax seed oil. First use, I made your french fry recipe last night came out great (you mentioned deep fry potatoes). Bacon and eggs this morning, bacon delicious, eggs stuck just a little bit (you warned me) took some seasoning off back in the oven, seasoned.
    I check other videos too, but no one compares to your advice I always come back to your videos for instructions. You are the best thank you so very much. Love your recipes too as well as your sense of humor.

    I make them too from scratch its a time consuming task but well worth the time when seasoning to our own taste. Thanks for all your great recipes and step by step video's Ken, they are very helpful in expanding my meal menu.

      After the first fry, vaccum seal freeze them in batches for later. Our house always has frozen fries ready to cook in 5 minutes!

    Kent, we are very similar, we experiment on foods for best flavour and nutrition. My way of making french fries is simple. I buy quality pre made frozen fries and cooked them once in beef tallow or grease for approximately 4 minutes. Take them out of the grease into a large bowl and season with salt right away. I swear to you that the easy and best French fries EVER. I tried different oil, different seasoning, triple or double cooked fries. For me, this was the knock out fries, and the easiest fries EVER. I promise. Great videos, big fan and keep up the good work.

    I can HEAR how good those fries are! Btw, your french fry slicer looks similar to what they use at In-N-Out Burger (they bring their fries in as whole potatoes), except theirs is set up vertically.

    When I worked there, we cooked them in beef tallo. Came in frozen, having been fresh peeled, cut and blanched in oil and then flash frozen (all in less than 10 minutes). Shipped, stored and cooked while frozen. 355 at 7.5 minutes.

    Hey Kent, I want to give you some VERY VERY good advice. A friend of mine one day, did exactly as you did on the rafter of a porch. He did a chin up or two, and when he went to let go, his wedding ring caught, and damn near took his finger off. It cut all the way around it, and dang near skinned his finger to the bone. I would hate for that to happen to you.

    They look amazing! My wife and I miss the old McDonald's fries, she used to work there as a teenager in the 80's and knew about the beef tallow. Because of them catering to a small vegan minority we lost the best fries ever made, my wife won't even eat them now.
