    • How to Make Lo Mein wi...
    Recipe for the lo mein/chow mein "gravy" sauce:
    Sauce:
    1/4 cup chicken broth (stock)
    3 tablespoons oyster sauce
    1 tablespoon soy sauce
    1 teaspoon cornstarch
    1 teaspoon sesame oil
    For the cook:
    Approx. 3 tablespoons vegetable oil (for the griddle)
    4 teaspoons ginger - zested
    2 teaspoons minced garlic
    1lb. chicken breast thinly sliced (bite-sized pieces
    Egg noodles *for this cook, we used Udon noodles (we cooked beforehand according to instructions on package - in boiling water approximately 8 minutes or until soft)
    1/2 carrot, julienned (we used pre-sliced carrots)
    1/4 pound baby bok choy, bottoms removed
    3 scallions, 1/4 inch cuts
    Directions
    For the sauce: Stir together the chicken stock, oyster sauce, soy sauce, cornstarch and sesame oil. Set aside.
    For the noodles: Heat griddle to med and add the oil. Once you see wisps of white smoke, add the ginger and garlic and cook until light brown and fragrant, about 20 seconds. Stir in the chicken and cook until medium, about 1 minute.
    Add the carrots, followed by the bok choy and noodles, and cook until tender, about 1 minute.
    Stir the sauce, pouring directly over the chicken lo mein, and incorporate all ingredients well.
    Continue to cook until the chicken is cooked through and the sauce starts to bubble and thicken. Transfer to a serving platter, garnish with the scallions and serve immediately.

    Im on a healthier kick as well after getting pancreatitis. It killed alot of what I can eat. Im supposed to stay away from fried foods. Over the last 8 months of learning how to stay out of the hospital i noticed that olive oil once in a while is ok but I found that the better oils like coconut oil, avocado oil, grape and flax seed oil don't set off my pancreas. I came to comment about how how perfectly the gray in your beards match 😂 but yall started talking about the oil and got me going

    I'm definitely lo mien in the membrane, lo mien in the brain! I love Asian noodle dishes, they are so good. I just love how the noodles hold in the heat off the griddle too... yum! I am curious, what noodles did you use? Normally lo mien isn't flat and more round, but I like the idea of it. Kind of reminds me of Pad Thai. I am curious about your health adventures. We really need to chat soon. I am looking to start a diet because I gained a bit going off of a diet and dealt with some health and depression issues. I am thinking about trying the carnivore diet. Carbs really are the killer. Doing that diet means you can use the great fats like lard, and butter. I actually heard that grape seed oil isn't to good for you, just like all the other seed oils. I haven't really looked into it though. I have been trying to use Avocado more over Canola, and off course I always use olive oil. Stay cool gents, and griddle on!

      Recipe for the lo mein/chow mein "gravy" sauce:
      Sauce:
      1/4 cup chicken broth (stock)
      3 tablespoons oyster sauce

      (This is for 1 lb of chicken) - we mix the chicken broth with the starch until the starch is dissolved, then add it to all the other ingredients. Good luck fam!!
