All mashed potatoes are good but this is exceptionally good. For any economizers out there, you can buy a 10 lb bag of potatoes, a small container of sour cream and portion into three batches. Also, if you have a FoodSaver and a sous vide, you can make 12+ servings of mashed potatoes for real convenience and savings. It freezes perfectly. But the best selling point of all is the flavor! These are fantastic!

I have found that the best tools for the fluffiest mashed potatoes are either a ricer or food-mill. I also learned years ago that cold butter should be added before milk to insure even melting. If you melt the butter first the milk solids and fat separate and don’t mix into potatoes evenly.
They look yummy! Question: can you keep these on warm after you make them without them getting gummy or starchy while you're waiting for other items to finish cooking? Or is that not recommended.

I never really peel potatoes, but when making mashed potatoes I do, but I cut the peel off (Making sure to scrub (wash) them) then chuck them into my food processor and polarize the peel and I add it right to the rest of the potatoes.. I started using my instant about3 years ago (trial & error) making them.. Loved your version too.. Here is another tip that will allow you to add lots of flavor to it also.. I slice my potatoes (after cutting the peel) Then I soak them in salted water (1teaspoon for a gallon of water) for 10 minutes, then rinse them twice, I put 3 parts water and 1 part softened butter in the instant pot, salt an season to your own taste, I like to add 1 large onion roughly cut and 2 garlic cloves crushed, put the pulverized skins in, when done I add half n half.. I use an immersion blender in a few short bursts and hand mix in-between bursts.. It does not matter how much of my mashed potatoes I make, they are devoured.. Thank you for sharing.. Please test my method an see how it works for you.. Also instead of the water during Thanksgiving & Christmas I use (homemade) turkey stock.. Took me a while to figure out that soaking and rinsing is the key to awesomeness (and removing the starch)... Merry Christmas.. OH.. I let mine fulling natural release, takes about 15 to 25 minutes..
I love the idea of soaking the potatoes in salt water. I often do that if I want to get a head start on prepping the potatoes and then leave them in the fridge overnight. And garlic cloves always are a good idea!!! Thanks for sharing.

Do you have the portions for 5 pounds of potatoes? How much water? etc This recipe was delicious when I made 3 pounds...I don't want to mess it up, but I need to use 5 pounds this time.
Love hearing you enjoy these. For 5 pounds , keep the water and cooking time the same. As for additions, add 2 teaspoons kosher salt, 5 tablespoons melted unsalted butter, 3/4 cup milk or cream warmed, and 3/4 cup sour cream.
Hi Kristen: great recipe as usual. Our old Instant Pot just broke today (after much use! I am overwhelmed with all of the choices of Instant Pot. I had no idea. When we bought this one, there was only one choice. Are the more expensive ones worth the extra cost? They sure do look a lot nicer than the one we have. But I wanted to ask your opinion first. Barbara- hope this is helpful…I think it would depend on if you would use and/or enjoy the extra features. Or want a fancier digital interface. This is the best time of year to buy one! I’d say get the nicest one at the deepest discount. I personally have the new Ninja Foodi SmartLid appliance that still pressure cooks and air fries, etc and absolutely love it. Good luck!

I like using a mixer on high after mashing the potatoes, butter, milk and seasonings to the whip potatoes into a creamy consistency.
I am glad that works for you, I find it can make mashed potatoes gummy, but if you love them, DO IT :)

My 6Q pot says to put in at least 1.5 cups for liquid,or does 1 cup work okay?
1 cup works well :)
Why they have to cut in cubes ?
It will help them cook faster and more evenly. Feel free to cook the potatoes whole, but I would recommend cooking for 20 minutes on high pressure.

depending on how much potatoes you add you need more water or else the pot won't have enough water to seal
You IP should seal as long as you use 1 cup of water for a 6-quart and 1.5 for an 8-quart.
