The biggest and most dangerous mistake people make with boats is not enough engine. Whatever a boat is rated for, that’s what you should go with. You could probably get away with a smaller engine on a smaller lake perhaps but open water need all the muscle you can get. Even a lite inflatable like that. You get wind a currents working against you and it can be deadly. That looks like an amazing fishing craft. Something definitely to consider.
Aliex, your son has an enthusiastic personality and should start his own kayak fishing channel. Set him up with his own rig and get him started. Young people need role models and encouragement from those their own age and additionally culture. Our young people need these role models and people they can relate to, that gets them off the couch, away from the cell phone, and out in nature. The electric motor may not have as much punch as a gas motor but has easy operation when fishing near the bridge - nice set up. It would have been interesting out there in a kayak.

I would actually really like to get something like this at some point. I like the seat that comes with it. The older I get, it would be nice to be sitting on something more like a bass boat seat and this has that. This was actually my favorite thing I saw on iCast videos.

Going add a secret for you Ailex, for more bites, cast all the way passed the far shade line from (second bridge’s shadow) best if going with the tide. As your jig hits the sun line strip, let it drop in twitches to the bottom, then crank up close the surface as you hit you near the next shade line, let it bump the bridge pylon high and let it drop to it’s ledge, then lastly pull bait out into the channel between the columns in the shade.🪡❤🎣✌️
I caught my fish less than a hour from launching, didn't have to deal with bait. Cut bait is amazing for throwing out a few rods and just have fun casting I used to do that a lot, would get 3_5 on at the same time lol
