    RECIPE
    INGREDIENTS
    2 tablespoons olive oil
    1 (28-ounce) can whole tomatoes
    3 tablespoons pesto
    1 (2 oz.)can of flat anchovy fillets
    1/4 to 1/2 teaspoon red pepper flakes
    4 garlic cloves mashed
    1 med onion diced 1/2 inch
    1/2 teaspoon kosher salt
    2 1/2 to 3 cups water
    12 oz. dry thin spaghetti(not angel hair, package should state thin) broken in half
    1/2 cup pitted kalamata olives sliced in half
    1/4 cup drained capers, coarsely chopped
    1/2 cup of grated pecorino plus more when serving
    DIRECTIONS
    Prep the tomatoes. Place a strainer over a bowl. Pour the tomatoes into it , and reserve empty can. Open tomatoes with hands and pull off stem core. Place tomatoes in reserved can or separate bowl.
    Clean out strainer and return it to bowl. Empty the processed tomatoes in the strainer to drain off excess liquid, about 5 minutes. Reserve tomato juice for later.
    Add olive oil to a large skillet or wok over medium heat. Add onions and sauté fo 5 minutes. Add the strained tomatoes into the pan stirring occasionally, breaking the tomatoes into smaller pieces( like 1 inch) until softened and starting to carmelize round edges. Add the pesto, anchovies, garlic, red pepper flakes and salt, stirring constantly about 30 seconds
    Add the water to the pot and bring the mixture to a boil. Add the spaghetti and submerge into mixture, reduce heat to medium, cover and continue to cook stirring frequently, until the sauce becomes thick and the spaghetti is al dente. If the pasta is not cooked add up to 1/2 cup of water until it does.
    Off heat add the olives and capers and toss to combine. Add the pecorino and toss again. Serve with additional cheese.
