Sydney chef George Francisco whips up his legendary Chesapeake Bay crab cakes with a spicy Cajun remoulade. Maeve then learns some of the secrets of the American barbecue from Brisbane restaurateur Steve Johnson. And in the hills behind Byron Bay, Californian expatriate John Boland shows Maeve how to make his renowned Californian fish tacos.

You can't really wrap up American food in one neat package because it varies so much by region. I could tell this guy was a New Englander when he mentioned crab cakes with Old Bay seasoning. It also depends a lot by whether you are close to the ocean or not. Of course on the coast, they eat a lot of fish, but more inland we rely on beef.
