It depends on the type of noodles you order. This time you ordered dry noodles so the soup is a free item to accompany your meal. If you ordered soup noodles, then the soup goes in to be mixed with your noodles.

Some local dishes invented in Taiwan then also found their way back into Fujian since they are very close to each other.
