Green Beans with a Mountain of Panko

    Green Beans with a Mountain of Panko is my latest statement side dish invention! Blanched beans smothered in a billowy tahini yogurt sauce piled high with a mountain of crunchy parmesan panko breadcrumbs. Easy. Make-ahead. Snack-worthy! - N x ❤️
    GREEN BEANS with a MOUNTAIN OF PANKO
    BEANS:
    700 g/1.4lb green beans ends trimmed
    1 tbsp extra virgin olive oil
    1/2 tsp cooking/kosher salt
    1/4 tsp black pepper
    WHIPPED TAHINI YOGURT:
    1 cup (250g) plain yogurt
    2 1/2 tbsp tahini
    1 1/2 tbsp lemon juice (sub 1 tbsp clear vinegar)
    1 garlic clove finely grated
    1/2 tsp cooking/kosher salt
    PARMESAN PANKO MOUNTAIN:
    3/4 cup (45g) panko breadcrumbs
    3 tbsp (45ml) extra virgin olive oil
    1/8 tsp cooking/kosher salt
    1/4 cup (25g) parmesan finely grated (tightly packed cup)
    1. Put beans in big pot of boiling water, once it comes back up to the boil cook for 2 min then drain. Rinse under running water, dry. Toss blanched beans with oil, salt and pepper.
    2. Whisk Tahini ingredients, microwave 20 seconds, whisk again - will become like soft whipped cream!
    3. Toast Panko mix on stove.
    4. Assemble - beans, sauce then panko. Attack!

    This looks really good. I always have tahini on hand because I make my own hummus but I never thought to use it in a sauce. Will give this a try. Thank you.

    Looks good, but I just cant eat olive oil.... it's so heavy.
    I fried Chicken in it once,.extra virgin OO and it was saturated greasy.

      Extra Virgin is for things like salad dressing. You should never fry it. Use regular olive oil. Better still you can now buy light olive oil which has a less intense flavour.

      Try using canola/vegetable oil for heavy frying.

      Use cold pressed light virgin olive oil.. no smells light and healthy..
