- Royal bibingka is a popular Ilocano speciality. It's not the usual Bibingka that most people know and enjoy during Christmas season. This type of Bibingka is made of glutinous rice flour, coconut milk/cream and eggs, which gives it a chewier and denser texture, similar to a cassav cake. This Yummy Kitchen version of the infamous Royal bibingka is made even more special with an addition of coconut strips. So, give this recipe a try.

Ingredients:
2 cups glutinous rice flour
1/2 cup milk
1 cup sugar
2 cups coconut milk
Cheese
Butter
3 pcs eggs
Aluminum foil
Description:
1. In a bowl, combine glutinous rice flour, sugar, milk, eggs and coconut milk. Mix until there is no lumps.
2. Add coconut strips and mix again until well combined. Set aside after mixing.
3. Grease baking pan with softened butter.
4. Pour mixture into the pan, fill halfway.
5. cover with foil.
6. Bake for 10 to 15 minutes in a preheated oven
7. Remove from the oven and brush top with melted butter
8. Sprinkle some sugar and grated cheese
9. Return into the oven and bake again for 10 to 15 minutes or until turned golden.
10. When golden in color, remove and let it cool.
11. Serve and enjoy!

I followed ur oven temp and duration of 10mins for the first phase of baking, but it didn’t turn out the same way like yours, so I had to add another 3 mins ( foil on) and 7min without the foil to get the same texture before brushing with butter and butter 🤔
