CASPIAN SEA, IRAN - The black caviar from the Beluga sturgeon of the Caspian Sea is among the world’s most prized delicacies, and Iran is home to some of the best caviar in the world. We had the privilege to visit a caviar fishery, where they opened a beluga sturgeon, removed the black caviar, and processed it. It was a learning experience about one of Iran’s most important delicacies. #Iran #Caviar #PersianFood
Dr. Caviar - After removing the sturgeon caviar, the caviar was handled very delicately. Dr. Caviar, washed it, and then salted it. We had a chance to try the caviar fresh before being salted, and it was so pure. After salting, he then stirred the caviar around, and put it into tins to remove as much water as possible. We enjoyed fresh caviar and crayfish for lunch.
Ahmad Kebab, Rasht, Iran - For dinner we headed to Ahmad Kebab, one of the most legendary kebab restaurants in Rasht. Along with bull hump, sour “pomegranate” kebabs, and koobideh - ground meat kebabs, the highlight was fresh sturgeon kebabs. We took a big piece of the sturgeon from the morning to make beluga sturgeon kebabs. They were some of the most juicy and tender fish kebabs I’ve ever had in my life.

I found them to be very sloppy with their cleaning process, I mean the bowl it was in was too small, and then when he was adding the water and cutting it up then separating the eggs, my jaw dropped watching how sloppy he was and how many eggs were being wasted because he was so sloppy. Unbelievable how careless they were.

Some people always think they're better than others and they're ethical while others are savage. This top-down view of other countries should end. A lot of the ideas that seem new to Western societies have been in place in other parts of the world for centuries.

I'll admit I wasn't a fan of Mr. Taster when I first saw him a couple months ago in several food travel shows, his laugh drove me crazy. But seeing how much he loves his country and how much he genuinely cares for the people he's sharing these experiences with I realize he's the exact kind of person you should surround yourself with. He's so protective and attentive and just kind. That's really special and I understand why I've seen him on several channels, he's the perfect ambassador. Been watching you since I saw your vlog where, in Iran, you bought the meat. Then, you walked it across the street with your homie, that jolly fellow, to be cooked and served.
My biggest impression from the vlog I watched today about the sturgeon is:
Wow. When I look at some of the foods, they seem like country cooking to me. Standing out in my mind, though, is the familiar way the folks all interact with you. Food is center stage, on the surface. Just inside, what resonates with me the most is the way strangers seem like family everywhere you go.

No way to get the eggs has led to the near extinction of beluga.as a result over ninety five percent of beluga can is farned today. There's eggs from other sturgeon species that is wild caught but mostly they are good but not in the same league as beluga.
