RECIPE:
250 g plain flour
80 g demerara sugar
1 tsp powdered ginger
1 tsp baking powder
1 pinch of salt
50 g honey
1 large free-range egg
80 g cold unsalted butter
grated zest of 1 lemon
1 egg white
150 g confectioner sugar
a few drops of lemon juice
Preheated oven - 10 mins - 180°C/356°F/gas mark 4
