Hi there. Just finished making the cupcakes/muffins. They came out great especially since I used 4 smaller carrots and made them so moist. Had to cook about an extra 10 minutes but cooling off and not frosted yet. Super delicious and filling without frosting. Will frost tomorrow as I have no cream cheese. Thanks for recipe. I have to admit. We had lunch at a buffet today. I ate almost all meat then I had a small piece of carrot cake for dessert. Oh, it was so good. Back on track next meal.
Follow up - I finally made this over the weekend and they were the very best carrot cake cupcakes I’ve ever had (keto or no). My dad ate two because he couldn’t believe the first one was so delicious. He is usually so careful to space things out, but he could not resist this time. The others are frozen and rationed but it was such a joy to see him so happy.
If you like moist, soft cake on keto, use allulose. I get a big bag, which is expensive, but unless you're eating cake every day, it will last you a long time. It also makes the best caramel.

From the appearance of the finished cupcakes before frosting they could each spare a half teaspoon of batter to get to twelve. Besides then there is more room for frosting😅.
If someone who is a sugar and carb addict and truly wants to do Keto the right way, especially if that person is pre diabetic, diabetic and/or overweight, stay away from ALL Keto Muffins, Cakes, sweet Chaffels and Cookies because it will continue to cause them to have cravings for carbs and sweets and eating all that stuff is what I call a junk food “Keto” diet!

The best thing for them is strict carnivore until the addiction is able to be overcome and then, they need to be careful not to tip too far. But a lot of us trying the keto/ketovore diet are not full blown sugar addicts and treats like this help keep us from splurging on full sugar treats when we miss a dessert.
Please reconsider saying “OCD” when you mean perfectionism or just being particular. It’s like saying your bipolar disorder is kicking in when you change your mood. OCD is a real, diagnosable and often debilitating disorder. Saying you have it flippantly could be harmful to those who truly suffer with this. ❤
Just consumed the carrot before you go out, duh! besides carrots are pennies compared to your prepackaged elements that are at least $1 to $1.25 per day and is only an avenue of making money for RUclips influencers . it's mostly sodium so all you have to do is put the tip of your most finger in a jar of Himalayan salt a couple times a day or add it to warm water and drink it. anyone afraid of eating a carrot needs to find a Panic Room!
yes 1000 mg of sodium - The general recommendation is 2,300 milligrams per day. That is for people who eat the SAD diet. Those who follow a low carb diet need MORE sodium per day 2000-4000 mg because the don't retain fluid. Low carb eating causes your insulin levels to go down and your body starts shedding excess sodium - and water along with it. You can eat processed food but then you can't have LMNT. I love LMNT especially the chocolate in my morning coffee!
You failed to let us know how much sugar is in that keto friendly muffin! sugar is more dangerous than your carb. It only promotes cravings for more sugar shame on you for not disclosing the nutrition or lack of nutrition of your muffin. At least at the store you have a chance of reading the label and deciding to put it back. we have the facts and we can judge for ourselves but you don't give us the chance.
I don't know how people do those alcohol sugars. They are a real gut ache for me. They also raise uric acid levels. Go read up on how uric acid can cause cardiovascular disease and gout.
@@marthasanchez4711 I often use honey - I have really bad gut issues and honey is the only sweetener that gives me no side effects. Many of the fake sweeteners are terrible for brain health. Unfortunately in this recipe the sweetener is dry so not sure how to substitute with honey. I may experiment with adding more almond flour.
Most sugar alcohols bother me, but Swerve never bothered me. It used to be mostly erythritol with some oligosaccharides, but they have changed the ingredients to make it a blend of erythritol and allulose. Allulose causes issues for me so I'm switching back to Lakanto's classic erythritol and monkfruit blend. There are alternatives if even erythritol bothers you which is rare. Theres stevia, pure monkfruit, etc and allulose isn't a sugar alcohol, so it might work for you.

Makes fantastic simple syrup as well. The Rx brand had a slight marshmallow-esque taste to me and that’s fantastic for the fall/winter season!
