Jammy Dodgers - Britain's Favorite Biscuit (Cookie)

- Jammy Dodgers (Sable au Confiture in France) are an Iconic British shortbread filled with strawberry jam and dusted with powdered (icing) sugar. These delicious treats will fly off the plate once you have made them. Even better with a cup of tea. Double the recipe when you are them... you will thank me later. :)

JAMMY DODGERS
SABLE AU CONFITURE
Makes about 15-20 biscuits
1 ½ cups all purpose flour
½ cup almond flour
1 egg
1 Tbsp almond extract
½ cup plus 2 TBS soft butter
½ cup sugar
Extra flour for dusting
For the filling:
½ cup Strawberry jam
½ cup powdered sugar
In a large mixing bowl, cream together the butter, sugar and egg until light and fluffy.
Scrape down the sides of the bowl and add the almond extract, flour and almond flour. Mix until combined. Form into a ball and refrigerate for 2 hours.
Dust a little flour onto the table and roll out the dough to about ¼ inch thick.
Cut out na equal number of circles and then cut a center circle out of half.
Bake in a preheated oven 350 degrees for about 10 minutes. Allow to cool.
Spread jam onto the full cooked pastry circles. Dust the circles with holes in with powdered sugar and place on top of the jam.

Darren my mom used to make Linzer Tarts with Apricot, Red Rasberry (With seeds Jam ) on the bottom layer. She hid them one time from me in an old big coffee can inside wax paper with cookies in the can. She hid them because I would of eaten them all up..lol

Looks great. But in the US we make similar cookies at Christmas time. We use their German name "linzer cookies." I think German immigrant brought them over 100+ years ago, but in the US they are treated as a special holiday treat that you make once a year.
In Germany as well - they're called Linzer Plätzchen there, plaetzchen are typically smaller, more delicate biscuits/cookies. Red current jelly is traditionally used as the filling, and they are made once a year, up to a month before Christmas, in the frantic plaetzchen bake-athon leadup to Advent and Christmas. I made them about 15 years ago when my daughter was still small, without knowing they are also known as Jammy Dodgers!! Would have been fun to tell her about Jammy Dodgers. That was the year I made a dozen different kinds of traditional German Christmas cookies - and haven't made any since!!
They are phantastic, a classic biscuit of German Christmas bakery, traditionally called „Spitzbuben“, which litterally translates as scoundrels or rascals - perhaps because the mischievous boys would pinch them before Christmas… :)
I make them every year. We love them alot. I also make them throughout the year as everyone likes them so much.
In Italy we call them Occhi di bue, in english Cow's eyes!! 😂😂😂😂 I love them! Thank you!!
Love it. My mother used to make these back in the 70's. Pro tip, put them into a plastic bag, wait two days, the ingredients are coming together, softens up a bit. It's heaven!!

As I watch this, I remember my mother made something similar . Don’t know what it’s called but she made lots of different ones as I was a kid. Maybe this is what’s it called. It surely didn’t last long at all between the family and school lunches. She uses peach and apricot jam alot

I hear Neil Sean speak of them often! I always wondered what they are. Now I have the privilege of following you so I can make things I remember from my childhood in York.
I haven’t liked tea in mugs. It just doesn’t taste right. I have always had my tea in tea cups and saucers growing up. I was delighted when I bought a set of bone china place settings. It came with mugs instead of tea cups. I now enjoy my tea in those. They are a bit larger than the tea cups and I enjoy more hot tea in them. Something about bone china makes food taste better. Pure white so my dishes are the center stage.
We here where I'm from have a sweet called the kitchener bun. I grow up eating this wonderful sweet pastry you could fri or have it baked then filled with raspberry jam and cream with a dusting of sugar on the top. Can not resist one right now. 😋

We like to insert a little humour into our food names. Some people from other countries realise, others can't process it.

I made this recipe and it turned out perfectly! The dough was a little tricky being so buttery and got soft quickly, but patience and refrigeration worked a treat!!❤

Far beit an American Yankee criticize a royal chef, I have two comments. I make these cookies aka Linzer cookies each year for Christmas. One thing to keep in mind is that the butter in the cookie will ultimately migrate into the powder sugar. That said, they don’t store well. Also I prefer a little smaller cutout on the top cookie creating more of a “jelly sandwich”. Yours seemed to be two cookies stacked with some jelly piped in the middle. I love your videos and am looking forward to making your Christmas pudding. Thanks!

This kind of cookies (biscuits) are actually one of my favorites. I like them filled with jam or Dulce de Leche. I know there’s a brand of biscuits in the Uk called "Jammy Dodgers" but they look so much better homemade. Greetings from Mx. 🇲🇽

Those in Italy are called occhi di bue (beef's eyes), and we use mostly apricot or peach jam. I hate them because they always use the sorriest, leanest, unbutteriest pastry they can, so the jam tastes fine (not my favorite flavors, but it's OK), but the actual pastry is hard as a brick and totally flavorless.

They look so good! What kind of tea do you drink?
It’s just normal tea more than likely. English breakfast tea is what I think it’s called but we never say that in the UK. Of course herbal teas, fruity teas and green tea, chai tea etc are available but when someone in the UK says they are having a cup of tea it means usually a teabag, hot water, milk/plant milk, and sugar or sweetener to taste.
