Why Pork Roll (Or Taylor Ham) Rules New Jersey || Food/Groups

  • New Jersey is hard to love. It’s a land of endless debate: diner vs. diner, Giants vs. Eagles, Springsteen vs. Bon Jovi, North vs. South vs. Central... on and on. But there IS one thing that binds the Garden State together: pork roll.
    Pork roll is the unofficial -- but indisputable -- state meat of New Jersey. Even though everyone in North Jersey calls it Taylor ham, pretty much the entire state agrees that this processed minced meat defines its culinary identity.
    So for this very special Garden State episode of Food/Groups, we drove down the Parkway, up the Turnpike, and a bunch of roads in between to find out why pork roll is so damn important to New Jerseyans.

    I love that it's only a jersey thing. Makes it that much more special ❤️ my best friend moved to north Carolina and I mail him pork roll from time to time. He turns into a kid during Xmas when I do haha

      You can get Taylor ham in most grocery stores here in northern VA. Probably the southern most extent of where you'll find this stuff in stores. Go just 20 miles west of here and you'll be lucky if you can find anyone who's even heard of this stuff.
      Anyway, I discovered this after my mother remarried to an Italian guy from Hackensack. Taught me how to prepare it and fell in love with it the first time I tried it. He passed away 10 years ago but I still cook this stuff for breakfast.

    Loved this!! I lived in Ocean City, Maryland during the summer of 1975 and they had a Taylor Pork Roll stand on the Boardwalk that I loved and which is now, sadly, long gone. Guess I'm gonna have to take a trip to New Jersey!!

      OMG yes! We used to get them all the time! My dad would also go to a bakery in Hoboken for coffee cake. It ad a streusel top made from leftover cake and cookies that was about 2 to 3 inches high and the cake base was 2 inches thick! To die for! Those days are gone :(

      Can't find them here in the Austin, Texas, area. :( I miss them so bad. We can get decent NY pie and some decent bagels, but not hard rolls.

      @@_Voodoo_ we have lots of Mexican bakeries, but I’ve never seen any rolls in them that are remotely close to East Coast Hard Rolls, and the bolillos I’ve bought are far too dense. Not the correct texture/crumb inside.

    Huntington Meats at LA Farmers Market next to CBS Studios has pork roll. They have been getting it for years and all of us NJ transplants here have been buying from them. Headed there tomorrow to get some.

    Finally tried some in my home state of NC and now I'm mad that I didn't get to try it while I was in Jersey 2 times like 3 years ago. We had free breakfast at the hotels we stayed at and they offered a pretty universal breakfast spread. In fact, I made a keto friendly breakfast sandwich using 3 slices of pork roll in place of bread just this morning

    Grew up in jersey. Left there in 2010. Whenever I’d go back for a few days, Taylor ham egg and cheese on an everything bagel was a requirement every morning. By the grace that is Lord Taylor, I’ve found some in a grocery store in small town Wyoming. Couldn’t believe it

    As someone who grew up on Taylor Ham though never living in North Jersey( Parents are from there) God that stuff is awesome. I was elated when I found a restaurant that had it on the menu in Norfolk VA, too bad they served it completely wrong slathering it with about a half inch of mayo.

      Doumar's cone and BBQ( it has been on Food Network at least 3 times for various things), again it is served totally incorrectly but hey it is there. It is a bit of a walk from campus, but way within easy bike range. Oh yeah, GO BIG BLUE!

    I grew up in Orlando Florida but my mom was from Jersey. We had Taylor’s on a regular basis. In our house the way to eat Taylor’s was on two pieces of white bread with butter and ketchup! As a matter of fact, I have a box of Taylor’s in my fridge right now! Love it!

    Yes, our beef is phenomenal, I lived in downtown L, A for a couple year's and got to experience a lot of other cultures something like I would imagine in a way New York might be. Except I always missed the great plains beef grass fed paradise of cheap BEEF!

    Never heard of the stuff until I was listening to E-Street radio yesterday and they spent an hour talking about it. I had to see what it was, so I GOOGLED it. Now I'm going to see if I can find some online and order it delivered to Saint Louis so I can try this. Oh, by the way... if you ever get to Saint Louis, Missouri you need to find "Ruma's Deli" and try the Gerber. Best use of ham in the known world.

    Love Taylor Ham yes from the north just moved to South Carolina and found Taylor Ham in the grocery store we moved near Charleston ,SC when my family visits I make sure I have plenty on hand . I even order it on line My cousins from Chicago love it too When is the Pork Roll festival ?

    I live in Reading, PA and Taylor Pork Roll is here! It's one of those things most people ignore in the super market, but it's there. My mother loved her Pork Roll sandwich (no egg) when we went to the beach...Yes, we were "Penny's" but I did live in NJ for 7 years as a resident. :)
    I LOVE pork roll...I love it with cheese on a toasted buttered English muffin....And yes...it's Taylor pork roll or nothing. It's been a while too, so I guess I'll have to pick some up this week. :)

    I was ordering it down here in FL for a while until I just found out Publix (best market around) carries Taylor pork roll in the deli!!! Been getting it there now. I asked the guy one time just outta curiosity & he says “ oh yeah we stock pork roll here, with so many northerners you gotta have it” lol I was so happy.

    YES!!! I love love love lover Taylor Ham. Its still mind blowing that other states don't have it. I wouldn't want to live in a state that does not have it. Absolute breakfast must have!

    I live in Georgia but my mom grew up in Gettysburg Pennsylvania and somehow Pork roll was a thing there due to proximity to Philly. So the smell of my grandma's kitchen growing up was frying pork roll and strong coffee always. We dind't always have the good hard rolls but used English muffins instead or just ate it like a breakfast meat with eggs and no cheese.

      Central PA (i.e. Harrisburg area) is about the reach of TPR. Wegman carries it. When I head back to Pittsburgh, I try to pick up a package.... Grew up in Cherry Hill NJ. So it's a taste of childhood... that makes my wife (Chicagoan) gag. Just more for me! :-P

    I grew up in the Pennsylvania, right outside Philadelphia, and had no idea pork roll was a Jersey thing. We ate it there, too. It should properly be done with those little cuts that make it look like PacMan, so it lies flat and doesn't "hunch" up during frying. Note that only some of the featured grill chefs do that.

    Back in the day when my Pop would go to work, one thing was needed before he'd leave... and that was a Taylor Ham Samiche made from his Pop!
    SJ says Taylor Ham too since many of their grandparents first stopped in NY and North Jersey before settling there. Although you won't hear Taylor Ham said as often in SJ.
    Also, make it in a cast iron for crying out loud.

      Edit: "While ""Taylor"" is technically a brand of pork roll, in regions of North Jersey all brands of pork roll may be referred to colloquially as ""Taylor Ham"" due to John Taylor branding his original pork roll as Taylor." - Wikipedia.     25yrs of my life in South Jersey, 25 in North Jersey, the only time I hear it called Taylor ham is on these shows, either way it is the brand Taylor Ham, the product is pork roll. Other states have Taylor Ham which is to them Canadian bacon another product of the Taylor Ham company.

    Lived in Pennsylvania all my life and always had pork roll, you can eat it for lunch or dinner and even breakfast if you throw an egg and some cheese and maybe put it on a lightly toasted Bagel.

    Love that pork roll. Scarce in California but can be found at the Grove in Los Angeles Third and Fairfax. . Wish more restaurants in Los Angeles served it!

    All Pork Roll is made in Trenton, NJ. I grew up there so here's my take on it. It's called Pork Roll. John Taylor created it. That's why it's called Taylor Ham also. I prefer mine for lunch. I like it cut thick(you must cut the edges so it doesn't curl when cooking) add American chees, some fried onions and Ketchup on a Kaiser roll. It's better than any burger. I'll eat for any meal though.

    I moved to Burlington county from Somerset county , I haven’t really seen Taylor ham / pork roll down here . But then it was hard to find real pizza or subs, or hard rolls. After being here for over 30yrs , there is pretty good pizza, we eat hoagies down here and put jimmies on our ice cream instead of sprinkles . I still haven’t found a good hard roll ...I miss my hard rolls and butter for breakfast , or with pork roll cheese and egg.

    You have North Jersey way to south up on the map. There is a Central Jersey and we consider it Pork Roll. If you look at the map in the early few seconds, where the Raritan Bay is bring your North Jersey map just a little past the bay. There is a bridge there that separates North.
    And what I just did is exactly what you explained about us in the opening statement.

    I am originally from central Jersey where the term pork roll and Taylor ham are interchangeably, but Pork roll vs Taylor ham, okay here is the difference. There are some slight differences in the "spiciness" Case and Trenton is more mild, while Taylor is a little more spicy. Taylor ham is a brand, while pork roll is a generic. Trenton, Case and stores markets their product as pork roll while Taylor markets their as Taylor ham. Really the debate is all about marketing, because it is the same product.

    I’m from Jersey and didn’t get to go last year because of Covid and I live in Ohio. So NO PORK ROLL FOR ME!!! Cross my fingers this year. And yes Asbury park and Belmar is where I’m going

    I will never understand why people keep telling me people in the north call it Taylor ham and not pork roll. I’ve lived in warren county for almost my entire life and not once have I heard anyone refer to it as Taylor ham, not even when the brand being bought is called Taylor Ham.
