@alsothecrumbsplease I would like to replace the potato starch with mashed potatoes as is done in some bun recipes. How much would you suggest to replace the starch with this one?
do you think that it could improve the texture even more, with regard to the recipes of buns potatoes, or flour, starch, flakes generate the same result as mashed potatoes in your opinion
They look amazing! I want to try this recipe, but I don't have that pan, what can I use instead?

Approximately how many gm are in each bun? I like to weigh each bun for uniformity.
I just did these today. The total weight was 768 grams. I did ten 76-gram rolls.
