I made these on the 4th and they were so good! I ate them with bratwursts and with bacon-wrapped hot dogs with grilled peppers and onions.

I used your portions but made 5 buns to go with my 2:1 12” hotdogs (gotta love an 8 oz dog)…
When I make sourdough loaves, I make the dough and let it rise for 4 hours. Then form the loaves in a Banaton and fridge over night
Then pull and bake
Have you ever tried or considered making the dough to window pane, forming the buns, fridge them over night. Then pull and let rise for 4 hours and bake?
I’m wondering if being formed prior might increase the sour dough flavor or if it would even make a difference. Love to hear your thoughts on it.

How do I determine when the mixed ingredients are the right consistency? My dough was too wet after mixing then 4 hour rise. Too sticky. Should I have reserved some water from initial mixing or mixed longer or ? (Made the whole wheat version from web.) Mixed for 30 minutes with dough hook on mixer. You suggested to mix until elastic. How does this look???
To reduce stickiness, added flour then kneaded, then rested- several times to reduce stickiness. Added more flour when dividing then again when rolling out to shape. Final rise and baking were great, but exterior crust a liitle hard & interior softer - more like elongated dinner roll than hotdog bun.

When the dough doesn’t stick to the walls of the bowl is the right consistency. Sometimes it will take 5 more minutes if kneading, if your flour needs less water you need to adjust that too.
Can you keep kneading the dough in the stand mixer instead of by hand?

QUESTION: Hello @A Knead to Bake - I've never in my 50+ years... baked bread or buns etc. The most I've done is Baked Spaghetti hahahaha. I also only have a toaster oven and hope I can use it for these buns. I will be buying some pre-made sourdough from my local bakery. They said the parts of dough not used can be placed in the freezer.
So my question/s is, now that I have the dough thawed and ready to go, do I let it stand/rest first before I prep it each time I take a portion out of the freezer? AND do I have to knead it each time I take it out of the freezer to be used to make my hotdog buns? Thank you Chef.
First of all ir is better to place it in the fridge, the freezer can kill some of the important bacteria. I learnt that from the sourdough librarian who is the curator of the one and only sourdough library in Belgium. They don’t freeze their sourdoughs they only keep it in the fridge and they have the science to back that decision, since that place also works the science behind the sourdough starter. When your dough is thawed it is better to feed it at least once and wait 4-8 hours until it doubles in size before using it, then whatever is left put it back in the fridge.

After the first rise, punch down the dough and knead. Then, shape the bread dough into loaves or one single loaf. Place the loaf (or loaves) in a bread pan lined with greased plastic wrap to prevent sticking. This also allows the dough loaves to hold their shape when frozen.Mar 25, 2020"
