The Streaming platform target LUFS have been proven time and time again to be kind of bs - is there a way to bypass / ignore the prompts / profiles?

The streaming targets only show you, if you audio material is loud enough for a certain streaming platform. The automatic parametrization is NOT controlled by the LUFS value of the file, but the dynamics value.
