Back to School: Portable Vegan Lunch Ideas

- Today I am showing you some super easy portable vegan lunch ideas for taking to school/university/college/work! I hope you enjoy the recipes (full recipes below!)
Pesto Chicken Pita:
Pesto (makes approx. 1/2 cup pesto):
1/3 cup almonds
1 cup fresh basil
2 tbsp lemon juice
2 tbsp nutritional yeast
2 tbsp olive oil
1 clove garlic
Pita:
1 whole wheat pita, cut in half
Vegan Chicken (as much as you want/need)
spinach
sprouts
red bell pepper
Veggie Bagel Sandwich:
1 everything bagel, cut in half
2 tsp vegan mayo or hummus
sliced cucumber
sliced tomato
sprouts
sliced red onion
sliced vegan cheese
Quinoa & Falafel Salad:
Quinoa Salad:
1-1/2 cups cooked quinoa
1/3 cucumber, diced
1/4 cup chopped red bell pepper
2 tbsp chopped green onion
Yves falafel or other store-bought falafel
Sauce:
2 tbsp tahini
1 tbsp lemon juice
1-2 tbsp water
1 tsp soy saue
1 tsp maple syrup
Berry Smoothie & Granola
1 frozen banana
1 cup mixed berries
1/2 cup orange juice (more if needed)
1/3 cup granola

i really want to go vegan, but i live in a home with meat lovers so it’s hard, but i have already taken a step by cutting out meat that’s not turkey, chicken or fish. my family gets frustrated with me because it’s hard to buy food for me and/or plan dinners because my mom has to make two. but i really hope when i move out or in the future that i can make the transition to fully vegan.❤️🥦🥒 i really love these videos they are so lovely to watch and so inspiring💞

Don’t worry kiddo you got this you could offer to make like a vegan side maybe a huge salad 🥗 or baked fries with a spicy 🌶 hummus enough for you and to share always be that positive influence to your family

I was in the same situation I would always have chicken every dinner. But you know I started off as a pescatarian- vegetarian- hopefully vegan soon but I can’t find any vegetarian lunches so I just watch vegan videos 😂 But dont give up what your doing is a good thing 💕🤍

Love love love. I would also like to see maybe a series of vids that are like dishes from different countries. Mexican, Mediterranean, Italian etc I think it would be neat to see what you could make plant based with different countries popular dishes

Definitely have to agree how realistic substitutes “meats” are looking recently! I went to Earth Fare yesterday and they had vegan chicken salad and oh man I was little hesitant almost! Lol!

you can take a berry smoothie for lunch and still enjoy the nice cream consistency so long as you store it in a thermos. I love doing this. its also so much better than a glass mason jar bc the container doesn't form condensation on the outside, and its far more durable. (I've shattered many mason jars)
I'm transitioning from being vegetarian to vegan and some days I really struggle with cravings especially for sweets I used to eat and your videos really help me overcome that and push me to try new amazing recipes to keep me on the right path, thank you, you're making the transition a lot easier 💞
the falafel quinoa salad sounds so good, but with brown rice instead of quinoa, and I would break up the falafel balls into smaller pieces so it's more integrated. Maybe add some fresh minced parsley to the salad aswell

Since you are in Canada, I really recommend the PC blue menu falafel. It’s has so much more flavour then the Yves and I find they keep better and don’t get squishy!

Have you ever thought of using an air fryer? It is a lot healthier than frying in oil. I got mine two years ago and I LOVE it!! It makes my food really nice and crispy (Browns it nicely). I would really recommend looking into one!
I even make crunchy chickpeas in there! Awesome snack!
