    I love the idea of using the diamond cutter for the tails. I made a bow a couple times and cut it free hand. I can never cut straight lines and usually have to scrap the tails and start over. Thanks for a wonderful tutorial.

    It's a pasta roller attachment that fits all KitchenAid mixer models. We carry the pasta rollers on our web site CakeSuppliesPlus. I was using a 5qt. lift-bowl model KitchenAid.

    Pricing should be the cost of your materials/supplies plus what you want to make per hour. Figuring out the materials is usually the easiest part once you get a hang of the amounts used per cake size. But the time required is usually an estimate--estimate high because it almost always take longer than expected. For wedding cakes, most shops have a price per slice that includes their materials and the expected time required.

    Not sure whether you mean the "pasta roller attachment" for the KitchenAid or the "Wilton rolling pin" or the "texture roller." You can search any of these terms on our website to find them.

    Use 1 to 2 teaspoons of CMC per pound of fondant. The amount will vary depending on fondant used, thickness of bow, etc.

    But remember, if you're just beginning/learning, customers should not have to pay the same for those cakes as they would for cakes from a decorator with many years experience and a reputation for high-quality cakes. Once demand gets high and you're very busy, you can raise your prices.

    No, fondant does not have as much gum powder in it and stays soft longer. Gum paste dries faster and harder than fondant.

    Are you using gum paste or fondant? Gum paste or a 50%/50% mixture of fondant/gum paste works best.

    Try kneading in more powdered sugar and/or Tylose/CMC. As I mentioned in the video, gum paste works better for bows that fondant. It dries firmer and can be rolled thinner. Adding Tylose/CMC to fondant essentially turns it into gum paste.

    Thank you for the clip. I'm asking a few questions & hope you will assist me. Since I want to open my own bakery how should I price the goods. I was told by baker's measurments, how many oz into cups, & pints into quarts etc. That's too confusing to me! Gathering recipes is easy, getting a mixer & tripple & quads are no problems. But making a profit, utilites, how much to put back into the biz, & to live on. I don't want to fail, can you help, please?

    I usually set them on a cardboard and then place in a dry location and dry at least overnight, but 1-2 days is better.

      Terry Fox fondant is more malleable when it’s freshly made or out of packaging. You let it sit out exposed to the air to “dry” so that it’s easier to handle and it’s stiffer and sits on your cake prettily. Decorative elements are usually a little bit harder. 😊👍🏼
