this kind of palm is soooo popular in my village (Gresik - East Java - Indonesia)...we eat the jelly-looking unripe fruit (we call it "ental") sometimes we also use it as additional of a specific drink (cut it into little cubes just like nata de coco), cook the hairy things covering the fruit when it's ripe (because once it's ripe, the fruit becomes sooo hard, you can't eat it anymore) and eat it like eating sugar cane...and we also make a drink from it too...when it's flowering, we cut the flower and then some liquid will come out, we collect the liquid and drink it...it's sweet...and it also has little alcohol on it...we call it "legen"...or you can also make palm sugar from that liquid... 😄
The alcohol in India is called Toddy. The jelly looking unripe fruit is called Tadgola in Hindi and Talshas in Bengali (so similar sounding to ental). The ripe fruits orange pulp is used in making Taler bora (a fried sweet) which is a seasonal dessert.

This is very a nutritious fruit and very difficult to prepare. Flies are attracted to ripe palm fruit (and some other fruit like jack fruit) like magnet. It is almost impossible to keep the flies away from the ripe palm or jack fruit -- it has a sweet flavor. I do not think these people have any choice in this matter. I appreciate their skill and hard work - thanks a lot for showing us. I learnt something new.
I am now 50 yr old lady and I am first time seeing this fruit and started google and this fruit and I wonder so many items we can cook with this fruit no doubt it is lengthy process but while they r doing I felt yak but everyone r saying good abt taste and smell of that fruit
In Andhra, the Idly was less popular but same will be made as roti by using same dough put it into fry pan and fried both side till it cooked. It may be for three to five days shelf life ad known as that I roti.
