    Loving your videos! I just got a grain mill and have been making things with einkorn berries. I am sure you know it’s very challenging to make whole grain einkorn bread. How do you think APF sourdough compares to whole grain einkorn? Nutrient wise? I plan to incorporate both into our diets. I’ve made muffins, pancakes, waffles and cookies very easily with einkorn.

      I love the taste and nutrient benefit of einkorn. When I make einkorn sandwich bread, I do about half einkorn and half all purpose so it results in a fluffier bread. I do like 100% einkorn loaves though! They are just a little smaller with a lighter nuttier taste, which I enjoy. It’s just preference :) definitely the extra gluten with regular flour is helpful in making big and delicious loaves. And Thank you! ❤

      @@76katster you’re welcome. I have a standard loaf: theduvallhomestead.com/no-knead-sourdough-einkorn-bread/ which is 100% einkorn and there is also a cinnamon raisin loaf. The 50% einkorn sandwich bread is coming soon!

    How much starter do you have to feed the 1 cup flour and 3/4 cup water to ?

      That is just how much I feed my bowl of starter. I keep a constant bowl going so I can use some anytime I like. Ultimately you will start the recipe with 3/4 cup of active bubbly starter :)
