From the Friends' cookbook, I'd suggest Ross' Moist Maker sandwich. You haven't done a sandwich or sub-related video in a while, and it'd probably be relatively easy to put together.

One of the reasons beer is used for frying batter is because alcohol slows down the development of gluten, allowing it to be thinner and less gummy after stirring - you often see vodka used for the same reason.
I generally use seltzer with a bit of vodka (something high proof if I can manage it) instead of beer. I’ve had two different beers turn the batters funny flavors after cooking. So this gives the gluten-thwarting power of alcohol, but with no possibility of undesired flavors later. Always keep the total volume of liquid the same if you substitute!

It's really due to the farmers not wanting to sell to the UK due to the paperwork involved now, plus weather, but as they have enough for local supply, they get more money for local supply, so are looking after themselves while the UK government blames just the weather

We thought he was insane but, in our family, if it's your birthday, we serve whatever you want for dinner. So we went to Google and found the most popular recipe. We fully expected them to taste like peas mushed up with toothpaste. We were so very wrong. They. Were. Amazing!
I'd be very interested interested to see battered fish in the air fryer. I know breaded is possible but I thought battered wasn't because the powerful fan would just blow the batter off. And I can't imagine it would taste as good without the reaction of the oil on the batter.

Exactly there has been poor weather but if you're a European producer it's easier to sell to the EU than mess about with red tape sending fruit and veg to the UK. So we're back of the queue.
We import a lot from Morocco, a non-EU country, and globally. There are other places in the world that grow tomatoes. You can’t blame Brexit for everything.

I would put the tartar sauce on the first quadrant, then put the fish on top of it, peas on the second quadrant, chips on third and just a little bit of sauce on the fourth so it's there but not enough to squeeze out. Serve wrapped in "newspaper" of course.
It isn't because the weather is bad in Spain etc, it's because we left the single market (brexit) and it's difficult to do business with companies in the EU now. The curry in the batter sounds bangin. I will have to try that.

Small tip Barry, the olive oil if it's a nicer quality one don't use it for cooking. Those are better used as a finishing oil to preserve as much of the olive oil taste as possible :)
Regarding the food shortage in the UK supermarkets because the other country had bad crops. It's probably just a coincidence no other european country, including Ireland, is apparently not affected by it.

honestly, I'd probably have put the sauce on the first piece with the fish, and had that final triangle clear, or added lettuce to the last bit, try to contain the sauce inside.
Fun thing about the veg "shortage", it only affected the UK (and the weather story was just a story, made up by them in charge!), cos truck drivers from the EU didn't want to sit around for 70-odd hours for tax people to do paperwork, so they just didn't bother coming our way......... :\
I guess it all depends on the peas you wanna go for. I really struggle with classic mushy peas from a chip shop, but mush up some normal peas and it's all good!

I think the last quarter is a tricky section, it can't really have anything that will squeeze out like the tartar sauce but also nothing that will just fall out, like chips or batter scraps. I think something solid, thin and flat, like a slice of cheese would work but I don't think cheese belongs with fish and chips. Not sure crushed chilli peas belong either though, mushy peas can't be made by squashing garden peas, they are a totally different thing.

You need to try chicken salt on chips
Add custard powder to your flour, gives the crisp and colour, just not the instant one with sugar! The one in the tub.😁
FYI, custard powder is just corn flour with some colouring and flavourings, sometimes with some milk or whey powder added.
