Mexico & America have a shared border like India and Pakistan. Pozole is made with hominy_, a type of corn that's been treated with lime or baking soda to force it to release niacin for human digestive processing. Corn has abundant niacin in it, but it's locked up in a form humans can't access without a lime treatment of the corn by boiling it with the lime mineral.

Their Roti is very similar to a flour tortilla, but tortilla de maiz (corn flour tortilla) is king. Make some Chile con carne, it's cooked in a similar way to the karahi they love, try frijoles charros, albondigas, picadillo, huevos divorciados. The village food from Mexico, is very much worth trying.
