Yellow sauce he puts on fried rice just making fried rice prettier does not contribute too much to the taste and it should not put too much like he did. The critical point is he did not use soy sauce or any other sauces for fried rice is definitely CORRECT. Making fried rice you only need salt and pepper. Good show if you go to China you will see many chefs like him fun to much and good food too. BTW, Cambodia is a nice place to visit I went there once and was very happy.
There is some difference of fried rice making between Cambodia and China. In China most of the time people will mix the rice with shrimp, chicken, pork, and/or beef (precook) the vegetable used normally peas and carrots not the one they used then sauteed in the wok again before serving. Look like the Cambodia way is putting those combo on top of fired rice. I guess the taste will be slightly different. Making fried noodles then vegetable is much better than peas and carrots.
oh my. he mixed the old ingredients to a new one.. no FIFO. First in First out.. hope you dont contaminate the food. sorry. the wok table is clean and shiny...

I noticed this too.. in 30c+ heat the cross contamination will be horrible.
You see the Chinese use the flame when cooking .....it adds that unmistakeable smoky-char flavor.
