    years ago, I had a sister in law, that swore that Meatloaf was best served with mushroom sauce over it. I will try this, I have been making my meatloaf for years from a Sunset magazine recipe , using Chile salsa over it. This might give me a delicious new reason to love meatloaf

    I'm glad to see a cooking video where the cook was not satisfied with it and is determined to continue to improve on his recipes. Well done!
    I've always been intimidated by videos where cooks always do things right and never make mistakes. It makes me feel like I have to follow everything to the letter. Seeing this video just shows that anything goes and next time it'll be better!

    I just made this for my Turkey meatloaf and it was so good I ate 4 slices the moment it cooled. This may be my go to recipe for mushroom gravy.

      @@iwantalbuquerque7770 preheated oven at 350 degrees. Cook it uncovered for thirty minutes to brown and then another thirty minutes covered with the sauce. So an hour total cooking time.

    "spoon me over the meatloaf please!" -creamy mushroom sauce. I like how the chef was compelled to do what the food was telling him to, even though he'd know it won't be the best idea! I do those little ill-adviced decisions in my cooking sometimes too !

    Thanks for this recipe Chef John! I didn't do it exactly as you did but it still turned out... delicious! The inspiration this video gave me allowed me to prepare a meatloaf the whole family enjoyed. Differences were: I used only beef, I seared the meatloaf first, I braised it instead of roasting it in the oven, and I had no mushrooms so I just did a sort of creamy vegetable sauce. Still followed your technique loosely and it turned out great. Thanks again and as always, we enjoyed!

    Good day Chef JOhn. I made this meal last night which was a hit. I used beef/pork meat to make my meatloaf that my grandmother and daughter ate. I had to make a mini beef meatloaf for my mom. I bought a different type of mushroom, which I cooked in butter, then I used cream of mushroom soup and half-n-half to the mushrooms. Added fresh ground pepper and seasoning salt to taste. I paired the meatloaf with new potatoes and french green beans. Dare I say ENJOYED!!!

      In my 20s I had a friend who grew up being child labor in her family's greasy spoon cafe. She showed me roux--butter, seasoned flour, cold liquids--and I never looked back. My sister clings to family "tradition": corn starch. No no no to that lumpy bs

    Maybe this is an obvious suggestion, but I usually add mushroom gravy during last half hour. That way I can carefully drain excess fat and gunk that oozes out of the meatloaf while it bakes in oven for first hour before adding the gravy. Does add one more sauce pan to the process.

    Made the mushroom gravy last night, I used over salisbury steaks made with saltines , onion , and egg browned on both sides then cooked off in the oven in the mushroom gravy. Delicious!

    Just made the pork stew, next... this meat loaf. I love the fall because i can comfortably turn my oven on, heat my tiny apartment and end up with a delicious meal; after my long walk with my loved one, in one of my areas beautiful state parks.     Great start for the recipe. I wouldn't put all the sauce in the with the meatloaf so it doesn't get all that fat in it. I think you did the right thing putting the sauce on top of the loaf first. It looked fantastic out of the oven.

    Chef John! So happy to see shitake in your recipe here. I love shitake! a suggestion...the stalk of the shitake maybe a little tough compared to the top but it's not tough to the extent of being inedible, rather on the contrary! and I definitely believe, the stalks have the most flavor! perhaps chop the stalks up really finely and add to the mince meat or to the sauce. the meatloaf here looks delicious of course :) i wish i had an oven....sigh!

      I was thinking the same thing. I haven't tried it yet and would most probably add a bit of worcestershire to the mushroom gravy because I like that bit of tang, but, yeah - I plan on giving it a go.

    Can I give you a tip about mixing meats for a meatloaf. Pick a single herb or spice for each inclusion. Pick thyme or rosemary for the beef. Pick sage or garlic for the pork. Pick allspice or nutmeg for the veal. Then... season up and use lots of pepper. Each addition needs a foil.

    I've made this for 50 years. It was quick and easy, hearty meal. I use fresh mushroom if I have them. But I use mushroom soup and cook browned patties in it until cooked.

    @delici0uswaffle The most basic recipe for meatloaf is ground beef, eggs, milk, and crackers or bread crumbs mixed and formed into a loaf shake. Then you coat it with ketchup and bake it.

      We need to be more mindful of our wine-bourbon-cognac-other liquors in our cooking ventures. That and fresh ground black pepper. (You dun good, Chef John. I was CCA '80-81 in the old DelMonte building. Best years ever.)

    to add an air of mystery to mushroom sauce, add a bit of freshly roast and ground methi seeds. roast them directly on a stove plate, untill they brown lightly, and crush in a pepper grinder, if you dont have a good mortar. (they're hard as rock)
    the fragrant, bitter aroma adds to the earthy depth of mushrooms like nothing else.

    @Aisyah75 I agree with you, there's always trials and errors in cooking anyway, and Chef John is showing to us there is this kind of situation when we thought our food would come out great, but actually needs modification and improvements to make the dish superb. He even gave suggestions on how to make the recipe tasted better.That's how natural cooks should be, there's imperfection in food we make but we still try to improvise that dish. Instead of complaining, why not be more positive right?

    Haven't put this in the oven yet, but I tasted the gravy and oh my goodness. It's so good! I had to do some tweaks since I didn't have beef broth on hand but it's delicious, nonetheless. Now I just need your improved three meats meatloaf recipe to seal the deal!

    I make amazing Salisbury Steaks which are similar to meatloaf. Believe it or not I used ground organic turkey. I stopped eating red meat and started using Turkey instead. It's not dry & it's very flavorful. People in my family at first don't no it's Turkey (we are foodies) not the 3 meat combo. I use: 2lbs.turkey,
    4 cloves garlic minced,
    1 large sweet onion minced,
    4 splashes of Worcestershire, 3 shakes of coconut amino acids, 2 packets of Knorr meatloaf mix, plain panko & Italian bread crumbs
    2 small eggs, Salt & pepper. After I form them into oval shapes I brush mushroom or brown gravy all over them. Then bake. Never over mix it will be tough. I wear gloves to mix the meat.

    This is my version of Salisbury steak. I’ve been making it for ages and no one ever didn’t like it :)
    A slight variation of the sauce is the basis of my venison or beef Swiss steak as well (no tomatoes!!! )

    My favorite meatloaf recipe is the Cracker Barrel Old Country Store Meatloaf. Haven’t made or found anything better. I’ll keep trying though.

    It's been 11 years, so I'm going to guess you'll never see this. I would add allspice and nutmeg to the meatloaf, a la Swedish meatballs -- but you have to use much more than 1/4 teaspoon of each. Maybe my spices are old, but I buy whole nutmeg and whole allspice, pretty frequently, and grind them or grate them myself. So they shouldn't be too stale. But if you use only 1/4 teaspoon of each, you won't taste them. I use much more, both in the meat, and also in the sauce. My family loves it, and now they want allspice and nutmeg in all kinds of beef dishes. And so do I. ; )

    I don't think that I can find this kind of mushrooms in my local grocery stores I live in a very small town in the grocery stores don't have a very wide variety of things can I use a different kind of mushrooms like cremini or just button mushrooms or in the spring when the morel mushrooms are available could I use those and this recipe looks really delicious thank you for all the great videos that you do

    Great ideas: using shitake mushrooms and cooking the meatloaf in that basic sauce. Both strategies release a lot of the flavor power of umami. I would probably make this a day in advance for further flavor enhancement and to easily remove lots of the fat that was generated.
