Running is probably the best stamina builder. I'd recommend starting with interval sprints and working up to 1000m sprints. Work in some distance runs as well. If you aren't used to running start with a mile at a comfortable pace and gradually ramp up pace and distance as you get stronger. That's basically what you do in the Army to build stamina.

I think i can pick out the z-step from the clip as what's called a slash step elsewhere. The right foot moves right before it grips the ground and pushes you leftward, correct?

This is very basic, but NOT ENOUGH LIKES. as a military combatives instructor for 15 yrs and a self defense instructor for 30yrs, one of the MAIN reasons 90% of the population CANT "fight" is because they don't know how to step and stay balanced. Something as small as STEPPING properly and balanced will go MILES in helping to maintain your endurance in a confrontation. 90% fail to he effective because they gass themselves out. LEARN THE BASICS AND PERFECT YOUR STEPS...and you will already be above 90% of the population. 💪🏽🔥💪🏽🔥💪🏽🔥

Try dancing, that helps a lot with footwork and rhythm
There is one mistake in his footwork, that is bringing foot together . This ruins your balance .
