Best tip I’ve seen was to turn up the heat as you add any ingredients to keep the temperature of the dish from dropping. Then turn it down again. Looks like a grand curry!
Here in North UK the take aways do a red sauce to go with Poppadoms chutney tray. It's sweet and sour and a little heat. Could you make that please? it's delicious!

Is that not just a yogurt and mint sauce with some chilli and a tad of red food and some lemon or lime juice maybe 🤔
