YanYan, Baby and Palette all make sense as goated speedrun characters, but Easel? I assume it’s something to do with his spin dash, right?
Bingo. Easel secretly has the strongest Spin Dash in the game, only being held back by a 2-second charge time. This makes him unreliable for RTA (real-time attack), but for IL (individual level) runs, Easel thrives on stages where he has downtime to charge his dash. There's a lot of Spin Dash strats that only he can do because of how powerful his SD is compared to the rest of the cast.

Why do some of the worlds look different?
The second half of the game’s 200 levels use the same backgrounds as the first 100, but at different times of day.
