    The thing to remember when cooking calamari is that the cooking time is either measured in seconds or hours.
    Anything in between will result in rubbery chewiness.

      Because calamari gets tough very quickly. So usually only a minute or two in the oil, no more, will have them nice and juicy and still tender. More than that, they get tough very quickly, and if they get tough they have to be cooked for a long time to tenderize them again. So you basically have to cook them very quickly or for a long time to avoid them being tough.

    I don't fry very often, but I certainly have to try this. Yummy. Saturday I made a delicious beef neck stew. You may recall me saying that beef necks give the beefiest flavor.

      In spain we got two ways to make calamari and one of them is practically the same as the one vincenzo made and the other one is like a puffier version of the first one called calamares a la romana.

    Ciao Vincenzo, mi permetto di darti un’altra idea per una pastella speciale (anche se penso la conoscerai già):
    Ok le due farine mescolate
    unisci il pizzico di sale, un uovo leggermente sbattuto e l’acqua frizzante ghiacciata! Mescola con una frusta e lascia riposare per 15 in frigorifero! Provare per credere!

    The coating was clumping and fell off in the oil. Still, tasted good. The sauce is niiice.
    I added some shrimps for different flavour.

    Here is the Swiss kitchen dummy. I only know the calamari being on the top of sushi. Then they are chewy. How do you make them not chewy?

    Vincenzo I am your fan, anyway this time let me say:
    1) please do not put the whole calamari together in the oil at the same time, as you did: oil temperature goes down ! And calamari will really fry again into next several minutes. Please Add few calamari each time waiting less a minute between each portion
    2) Vincenzo please ! That Maionese souce with "souracha" (what is it??) to eat with your crunchy fritto destroys your Italian reputation 🙃

    Its not as easy as it looks, the oil needs to be hot enough, otherwise the flour and seasonings will fall off the calamari
