- Dear friends, I hope you Will like my new video. It is very tasty and delicious. It's a family recipe and I wanted to share it with all my friends. Thanks for watching and commenting, and as always, I Shall be viewing your videos and commenting as well.
STUFFED PEPPERS AND TOMATOES - “YEMISTA” - INGREDIENTS
For the filling
8 Bell peppers
6 large tomatoes
3 medium potatoes
660g pork mince or beef
1/2 cup rice, washed
1 onion coarsely grated
1 tin (400g) crushed tomatoes
1 tablespoon tomato past
11/2 chicken stock cubes,
Dissolved in 1/2 cup of boiling water
4 tablespoons olive oil
1 teaspoon cinnamon
1 tablespoon dried mint
1 cup parsley, chopped
Season with salt and black pepper
For the sauce
The pulp juice from the tomatoes
5 tablespoons olive oil
5 garlic cloves, crushed
1 tablespoon oregano
2 teaspoons sugar (optional)
Season with salt and pepper

My yiayia used to make stuffed peppers on the hob, but I always make them in the oven, looks lovely as always

When we lived in Cyprus in the olden days, we didn't have an oven and my yiayia, as well as my mother and everyone else in the neighbourhood would take their Sunday roast in the local "Fourno" Sunday roast was very rare those days for a lot of people as we were very poor! I really enjoyed how, you made this stuffed bell peppers, I make them but never put the tops on them, I guess that makes them look, so decorative.. of.. course we enjoyed your video, you presented it with class, be proud..

we keep the tops on, I should imagine you have already guess it, mainly is to prevent them going dry, especially the rice burns and goes really hard on the top. Also, like you said dear Nancy, they do look better, and decorative. Am glad you already make them. Everything else will be very easy for you.

Awesome Stavros. Love it. Interesting the amount of dried mint: we (in the UK) don't traditionally go for bold flavours; I like the Greek/Cypriot use of bold seasoning! Looks great and I'll be trying this Yemista recipe soon.

Hello Tony! Thank you my friend, for your wonderful comment, and observation to the spices we use. Although it looked a big amount, it was just the right quantity. Yesterday, Saturday evening, we had some friends over for a meal. By the way they are English! They enjoyed eating the (Yemista) so much they wanted the recipe. So..... Thank you Stavros! I agree that it was just the right quantity - I wil be trying soon. I think 'British' food can suffer from being bland. I personally get through gallons of olive oil and a lot of herbs and spices :-)

The best country in the world!! We have been living here for a very long time. Nice to go way for a holiday, but sometimes can't wait to get back home!
