  • This video shows how to make a tasty traditional sweet for deepavali. Known by various names,adhirasam, ariselu,kajjaya or Anarsa, the sweet is found in various regions with slight variations !
    Ingredients
    Raw rice 1 cup
    jaggery 3/4 cup
    Oil for frying
    Ghee 2 Tbsp
    white til/sesame seeds 2 Tsp(optional)

    Mam, I always felt Adirasam is one of the most difficult recipes. It is very easy to go wrong and in that case it is a disaster. You have made it look very simple and easy. I feel like trying it. Thank you.

    Yummy! Aresalu.. my favorite, thanks to my Grandmother who painstakingly made them and packed in dabbas for us. She used til oil for frying them I think. But they were so delicious! You have explained so nicely Ma'am.

    Gitagaru 🙏for this wonderful recipe, you reminded me of my mum, she was a master in making this. Since we moved to overseas we can’t have them anymore unless when we come to India. But you have showed this recipe in such an easy manner we don’t have to depend on Mill anymore to grind the wet rice. 🙏🙏🥰. Will definitely try for this Christmas.

    It's the most common and authentic traditional sweet dish in the region extending from Odisha to southern India . In Odia we call it "Aarisaa" the preperation of it exactly similar . It's also one out of the 56 maha prasadan of Puri, shree Jagannatha-Swamy . 🙏 Hope , now u would have known about its connection with Odias and Jagannatha-Swamy temple.😊
    ☺️If you study deeper in our culture , you will find the odia culture is extremely similar to southern (especially Tamizh culture) . So I always have a soft corner in my heart for Tamizhen . 🙏❤️😊🙏

    We make adhirasam during devasam.Soji appam we make on festive eve. We make adhirasam same as how u make. EXCELLENT. Thakali pazham padham vella pagu veipom

    Hello Gita ji,
    I would like to share a small and an important tip with your viewer's. You have to make sure to cook the syrup till the soft ball is formed. But in any case if the syrup gets thicker and you see it gets hardened when you put it in water to check. Not to panic as you can sprinkle some water to get it to a soft ball consistency,. This process should be done on a slow flame.

How encouraging of you to say, try it out and you will all become masters :) Thank you - I have been trying to make Athirasam for Sri Jayanthi for the last two years - and it either breaks when put in oil for deep frying or turns out very hard.     One of my top favourites Mrs. Gita. My Mom used to have them made with sesame seeds. It's so lovely to see you doing that. Although I live in Germany, I'm originally from Hyderabad.

    Can we make Athisara without making Jaggery Syrup? I mean can we mix jaggery in the rice flour directly without making the syrup. Let me know:)

      No the syrup binds the rice flour otherwise as soon as you put it in oil it'll break into pieces

    I made them
    I used dosa rice n 24 mantra jaggery powder
    They turned out super tasty
    Little rice floor was left like 2 so

    We in Maharashtra make this adhirasam which we call anarase during diwali and jaishtha gauri pujan which is three day puja during ganesh festival on 4th - 6th day of ganesh pujan.
