This traditional way of doing things is the best. Baking in this traditional Ghanaian oven is the best but new ideas from technology is efficient but has side effects like what the baker was saying.

The process is bad for the long-term health of the workers. The baking room should be much better ventilated. They should not have to inhale smoke every day!
