That chicken rice is steam rice with marinated chicken gravy and Chinese sausage. (Cantonese dialect is call "lap cheong" - made from pork and fats marinated (rose water, rice wine and soy sauce), salted and smoked) Dish is similar like Claypot chicken rice(charcoal fire). Take out the chicken and mix the rice gravy evenly. Then scoop a spoon and eat with some chicken bites. Loh mai(glutinous rice) kai(chicken) is steam soaked glutinous rice, chicken gravy with Chinese sausage and shiitake mushrooms. Fu(bitter) kua(gourd) Bitter melon cut into rings and remove seeds. At the center is minced pork meat, fish, prawn paste. Normally can find in "yong tau foo" Siu mai - small dumpling, minced meat prawn and water chestnuts sometimes is added. Hai(crab) lao(roe) sui mai - but sometimes cannot find crab roe, they use minced carrot and put on top. Dim sum must dip in chilli sauce, eat hot and served with hot Chinese tea to balance the oily food. If cold, u will feel like bloating and lost of appetite bcos of the fats food turn cold. They also have pau(steam bun with fillings) pork and kaya are normally famous.
