    Blackberry Peach Crisp
    For the fruit base:
    2 cup fresh blackberry
    1-2 cup peeled and sliced peaches
    2 Tablespoons granulated sugar
    2 Tablespoons corn starch
    2 oz bourbon. (Four Roses used in this recipe)
    Mix lightly in a bowl together
    Preheat oven/smoker to 350 to 375. While preheating mix crisp topping.
    For the crisp topping:
    1 cup AP Flour
    1 Cup old rolled oats
    3/4 - Mayonnaise (for a more robust crust use a cup of Mayonnaise).
    1 Tablespoon on cinnamon and nutmeg (or to taste depending on personal preference)
    Mix together in a bowl. Until you get small clumps. If you prefer you can create a moth mixture.
    Place fruit base in a non stick increase baking dish. A heavy non stick pan usually works best. Especially if you plan to bake in your smoker. Bake at 350/375 for 30-40 minutes. Until fruit mixture is to a bubble and crisp topping is crunchy brown.
    Double Smoked Spiral Cut Ham
    Remove your favorite spiral cut ham from the package
    Place cut side down in a disposable pan
    Rub with Yellow mustard to help rub stick to the outside surface
    Rub with your favorite BBQ Rub
    Smoke for up to three hours at 250 or until slices begin to seperate and a crust forms on the exterior of the ham.
    Slice and enjoy
    Rosemary Bread
    3 level, cups of bread flour
    1 ½ teaspoons of salt
    2 Tbl spoons of Rosemary
    ½ teaspoon of instant, fast acting yeast
    ½ cup of spring/filtered water
    Dutch oven for baking the bread
    Parchment Paper
    Mix in bowl flour, salt, and rosemary.
    Heat water in microwave for about 50-55 seconds to reach a temperature of 105-115 degrees
    Add yeast and dissolve in warm water. (This helps disperse the yeast evenly in the bread/flour mix.)
    Once dissolved, pour over the flour mixture. Take spatula and fold over the mixture until thoroughly mixed.
    Cover bowl with plastic wrap and place in un-heated over with the light for about 2 hours.
    Once dough has raised take out of oven and keep covered.
    Heat oven to 450 degrees with your Dutch oven and lid inside.
    Once heated, take dough and scrape out onto parchment paper. For best results, place parchment paper in another bowl and scrap into that. It helps keep the dough from spreading out.
    Once complete, take the 4 corners of the parchment paper and place into the Dutch oven.
    Heat, with the lid on, for 30 minutes.
    Then take lid off and continue cooking up to 15 more minutes. You want a nice golden brown color.
    Remove from oven and let cool for about 10 minutes. Cut and slather with butter.
    Kens Oyster Stuffing/Dressing
    • 1 Loaf White Bread
    • 1 Large onion
    • 6-8 hardboiled Eggs
    • 2 raw eggs
    • 4-6 stalks Celery
    • I stick Butter
    • 1TBLS Sage
    • 1 Quart Turkey/Chicken Broth
    • 1 Cup shucked Oysters (Optional)
    • 1 cup turkey giblets cooked
    • I tsp each Salt and Pepper
    Boil turkey giblets in salted water until tender
    Chop celery and onions into 1/4” pieces, place into large frying pan with stick of butter and sage. Sauté until translucent.
    Tear white bread into thumb size pieces into large mixing bowl. Chop hard boiled eggs add to bread. Add chopped giblets. sauté vegetables, and salt & pepper to bread pieces. Mix well and pour broth over the bread mix. Add oysters at this point if using. Pour into a baking dish and bake at 350 for 1 hour.
    Banana Bread
    Ingredients:
    2 eggs
    1 stick of butter
    ¾ cup Brown Sugar
    2 ½ Cups of squished bananas
    2 TBSP of Cinnamon
    2 cups of self-rising flour
    Directions:
    Pre-heat oven at 350 degrees. Beat eggs in a bowl. In a separate bowl melt butter. Once melted add
    brown sugar then mix until smooth. Once smooth add in the beaten eggs and mix until thoroughly
    combined. Squish up bananas then add to mixture. Mix together well but small chunks of bananas will
    add to texture as well as flavor. Add the cinnamon and mix together. Once combined, add flour then stir
    in together. Pour into prepared bread pan. Add parchment paper to pan to make it easier to remove
    bread (optional). Cook for about 30 minutes. Make sure you use a toothpick or knife to make sure it’s
    cooked in the middle (if toothpick comes out clean then you are done). Remove from pan and let cool.
    Slice and Serve.
