    明天就是复活节了,来做十字面包。小时候在面包店常看到,却不知原来上面的十字是为了纪念耶稣基督为我们每个人被钉十字架所完成的工,现在耶稣基督复活了~ 一同欢庆,来做可爱香甜的十字面包。面团里面加了肉桂,豆蔻,丁香等香料,还有鲜刨橙皮和浸泡橙汁的葡萄干,可想而知面包整体有多香哦。面包整形也很特别,看起来像小餐包上面还加了十字纹路。烤好立刻抹上热牛油,外皮立刻增添光泽。趁稳撕开面包,柔软蓬松拉丝,回弹力好。淡香料味,满满带有香橙的葡萄干,好吃。
    收藏方式:烤好吃最佳。烤好放凉收密封塑料袋,室温3天。要保存更长,冷冻在冰库那里,吃前解冻即可。
    Tomorrow is Easter Day, let’s make Hot Cross Buns. When I was a child, I often saw it in bakery, but didn’t know that the cross on top was to commemorate the work that Jesus Christ completed for each of us when He was crucified. Now Jesus Christ is resurrected~ Let’s celebrate together and make cute and sweet Hot Cross Buns. Cinnamon, Nutmeg, Cloves spices are added to the dough, as well as freshly grated orange zest and orange juice infused raisins, just imagine how fragrant the buns are. The shape of the bread is also very special, looks like a burger bun with a cross pattern on top. While hot smeared with thin layer of butter to promote shining crust. Tear open the bread while warm, soft and fluffy, with good bounce back. Light spice flavor, full of raisins with orange aroma, delicious.
    Storage Method: Best eaten after baked. Once baked, let cool and put in airtight ziplock bag at room temperature up to 3 days. To keep it longer, freeze it in the freezer, thaw before eating.

    ♦ Ingredient 材料= Baking Tray烤盘15.5’x13’inch =
    125g Raisin葡萄干
    76g Freshly Squeezed Orange Juice鲜渣橙汁
    150g Lukewarm Milk (Below 40C) 温牛奶(40C以下)
    5g Instant Dry Yeast速溶酵母
    3g Caster Sugar细砂糖
    325g Bread Flour/High Protein Flour高筋面粉
    50g Caster Sugar细砂糖
    5g Salt盐
    1g Cinnamon Powder 肉桂粉
    0.5g Nutmeg Powder 豆蔻粉
    0.5g Clove Powder 丁香粉
    10g Freshly Grated Orange Zest 鲜刨橙皮
    56g Whole Egg 全蛋液
    4g Vanilla Extract 香草精
    38g Unsalted Butter (Soften) 无盐牛油(软化)
    =Cross Batter十字面糊=
    30g All Purpose Flour 普通中筋面粉
    10g Icing Sugar 糖粉
    35-37g Milk 牛奶
    =Egg Wash蛋液=
    1 Egg 鸡蛋
    =Top Glaze涂层=
    20g Salted Butter (Melted & Hot) 有盐牛油(融化和热)
    (Preheated Oven 190C: 15-17minutes) (Halfway rotate baking tray to heat evenly)
    (Top Bottom Heat, No Fan Force, 4th Rack)
    (预热烤箱190C:15-17分钟) (中途转烤盘受热均匀)
    (上下火,不开旋风,第4层烤)

    These look good, but I think they are supposed to be brushed with a simple sugar syrup after baking...

      是的,可以加糖粉来减低面筋,而且记得不要搅拌面糊过度哦。

    老师您好,请问中间排气收紧衮圆后不用进行中间发酵吗?还有想请问需要添加面包改良剂或乳化剂吗?因为有做过好几次的小餐包凉了以后面包就变的很硬需要回温才能吃。有2什么方法能改善吗?谢谢🙏

      不用哦。以前我也是以为需要加改良挤等,不过发觉真正的放式是可以不靠这些的。最重要要揉面到位,醒面到位,不够/过度都会导致面团发不高/塌陷而变硬哦。跟影片一摸一样的方式,注意面团状况哦

      用中种法或汤种法做出的面包可以保质三天面包都是柔软滴,你可以关注《萨姐的南腔北调》,我觉得她的教程比较适合家庭制作
