Michela Chiappa has a winner of a recipe, it's her version of a hearty, healthy Italian Minestrone Soup, with a little tip to make a delicious veg purée for weaning babies too! You missed a very key tip. To get all the caramalized sticky thing that the veggies left on the tray. Full of sweet and intense flavour. In my opinion you've should put some boiling water on it to recover it and then add it to the blender with the rest.

you can put them in vegetables soups or in broth; here in Italy some families use them also to make a very simple soup (that we usually take when we're sick) in which we only put risoni, olive oil (extra virgin of course), a little bit of tomatoes concentrate or sauce (and when I say a little bit I really mean it, something like one spoon per serving), seasoning (such as black pepper, sage or whatever you fancy) and once served we add parmigiano... its really easy to make because you simply put all the ingredients at once as soon as the salted water start to boil and then you simply wait the pasta to cook, the end result is a very light broth slightly thicken the amid released by the pasta; it's quite useful when you have stomach turmoil and it's hard to keep other foods down...

And one more thing "There is no set recipe for minestrone, since it is usually made out of whatever vegetables are in season."

DaMainDude, you are correct! This is "puré di verdure." Minestrone is a soup of chopped veggies. Both are great. I am Italian, and, as babies we had plenty of Parmigiano Reggiano ;) Also: "Minestrone" means large or big soup. It's like saying Lo Mein noodles. Happy holidays

francescaemc2 I really like Parmigiano reggiano too. Grana padano not so much. :) Parmigiano has a more distinct flavour. Grana feels too bland to me.
Chiappa in italian means Buttcheek. Chiappe means Buttcheeks. Acchiappa means catch. Now you know basic italian. You're welcome mammamia!

Minestrone by definition is 'A thick vegetable soup' with no definitive recipe. How is this not Minestrone.
Even if you just call it vegetable soup it still has 2 very endearing qualities. 1. Dead easy 2. Very delicious.
Its not because this is called Passato di verdure. Minestrone has chopped vegeatables. As far as I know. And I agree, Minestrone is delicious.

So is the stock seasoned or not ? You can't not add the stock to the baby food because it's seasoned, then add it to the adult food and then season it.

well, the reason why many are salty about this recipe it's because it's not a minestrone... if someone uploaded a video titled "How to make Apple Pie" but in the video showed how to make doughnuts, people would probably also be salty don't you think?

It looks really good, but why do you have to use so many kitchen machines? I mean, isnt it more faster to use directly a pot and blend the veggies in there. And just cut the veggies in small pieces, so it cooks faster than put it whole in the oven for nearly an hour. It is nice to cook like that, when you have a lot of time, but it is not for me. Sorry I will pass. :)
roasted veggies add a new depth of flavor that is really nice - not necessary but delicious!
Since it looks really good why should you pass it? Just do it your way - cutting the veggies in smaller size, blend it all straight away in a pot etc, etc - then. You passing this recipe altogether don't make sense.

Eric Weber I can understand that not everyone is as comfortable in the kitchen as another. But just putting everything in the oven, without seasoning, and then just mashing everything is not the way. You have such beautiful ingredients, and then they do this. This is not adequate to Jamie Oliver standards.

yes and no, minestrone is what we call soups made with chopped veggies and legumes, sometimes we add pasta in it but it's not the pasta that makes it a minestrone... nevertheless what she made definitely isn't a minestrone, it's a "passato" (another generic name that refers to soups made with blended vegetables)...
