Just made the cookies. Loved! Loved! Loved! Had to make a second batch for the first, were all eaten in a "test subject", aka hubby, I and a pot of coffee. Set out a few crumbs for the Blue Jays, Cardinals and Pigeons who squawked, piped and cooed their delight in the treat.

Yeah, can't wait for the Christmas cookies. Where did you get the mini baking sheet that you used to toast the pecans? It is the perfect size. I have looked on Amazon, but haven't been able to find quite that size.

Hi Kaleb....not really a fan of coconut.....would leaving it out cause any problems?
I think it would sadly :( the coconut is almost used as a flour so you may have to up the amount of flour slightly if you cut out coconut.
