I made this for Christmas, really good, I soak raisins overnight with Rum, the next day microwave butter and brown sugar, , let it cool before adding the soak rum raisin and for the cake , i add lemon peel candies , cherries candies and pecan, thank you for sharing the recipes.

this cake is to die for! we added roasted almonds as nuts, and *drum roll*, MUSKET and OLD PORT. about 1/2 cup! yummo. We tried the 750 of mixed fruit, but found it was just a wee bit too much fruit, so we dropped it down to 600grams. and added home dehydrated apples and bananas too store bought mixed fruit with all the goodies in. We used pureed mango, with warm water mix to baste cake at end.. OML super moist, super yummy. im in heaven!!! we are trying it in Muffin paper cups this time, easier to hand around. Its fab microwaved for 20second out of freezer if it lasts that long, and with warm Custard.. oh youll go to heaven! thanks for the recipe, best on the whole internet!
I half the recipe and baked in a six inch pan. I also grind the dried fruit in my mini kitchen aid food processor and added a touch of water for a smoother grind. It came out moist and delicious. Oh I baked it for approximately 45-50 minutes. Left out the nuts. Hope this is helpful for anyone wanting to make a smaller batch.

What I like the most is that it does not need alcohol and the ingredients can be bought anywhere. I also noted that as long as you store this in the refrigerator it will retain its flavor. I made one last December and I ate the last piece yesterday and it tasted the same as if I made it yesterday. BESTEST FRUIT CAKE RECIPE EVER!!!
I cooked 3 of these at Christmas and gave 2 away as gifts the other we kept for ourselves. Those that received them as gifts raved about how delicious they were and I have to say they were not wrong. I have been making a boiled fruit cake since 1964. A friend gave me the recipe when I first got married. It never fails and the beauty of it is that you can use whatever dried fruit you want to. If I am making a wedding g cake, I add cherries and candied fruit to give it a taste of luxury. I also boil the dates with the fruit if I want the cake to be extra moist, as boiling makes the dates melt into the mixture.
2020 I have baked 14 cakes of this recipe. Always a winner. Added a few things like nutmeg, ginger tsp each, half orange juice, treacle, vanilla esseence. I wish I could add photos. Dressed some since October with brandy. They matured very well

This recipe is very similar to a version my my mom made often. During the regular months of the year it was simply called “war cake” and there were no fruit or nuts in it and recipe was adapted to use only molasses. At Christmas the recipe was expanded by adding raisins or/ orange fruit peel and maybe some nuts that had been hoarded from some trees in the fall. It was so tasty. It still did not have all that fruit explosion but the Christmas war cake was carefully portioned out and appreciated. There was no alcohol, but a bit of marmalade or plum jamb would be warmed and brushed on portions as they were cut. My memories are clear and delicious. Thank You.

I have increased the size to fit my 9-inch springform tin but it is essentially the same recipe. Both my wife and I have never had such a moist fruit cake. This is quite simply the best. I made this yesterday and the whole family ate a slice today. It was great! My first time making it and I am so glad it turned out so well. Now I have the confidence to make smaller ones to give to neighbors/ friends as gifts. I didn’t add prunes/ dates - I used raisins, cherries and candied papaya. For nuts I added pecans and almonds.

My late mother gave me her fantastic fruit cake recipe before she passed and mine looks just like this beauty. However the method is slightly different As I put the sugar and eggs in a food processor to whisk up until I get soft peaks, then add the flour, dried fruit gradually. The ingredients are pretty much the same I also add fine ground almonds to the flour for extraño flavor. Then I would add the melted butter. Sorry but I’m not going to leave out the cognac. The alcohol burns off anyway and it bakes for 200 deg for around 7 hrs. It’s turned out great every time and will last forever when it’s stored in the fridge. Next time though I think I will make my own candied fruits ie orange and lemon.. I think soaking, cooking the raisins in liquor is an excellent idea.

This christmas for lack of time I followed your recipe...the cake is superb...I have saved a slice and am tasting it ...yes it has gotten Mellow and rich like old wine. Love this recipe! Try adding a tin of squashed pineapple to the first step. I also add twee teaspoons of bicarb to the flour mixture. Black pepper also adds to the flavour of this beautiful tasty cake! I bake it for 30 mins at 180, reduce to 150 to bake for another hour and a half. Then, if I want a darker colour, I'll bake it in a very slow oven for a few more hours, not forgetting brown paper or tinfoil on top. Btw, one can also bake this cake in the micro oven for 20 mins, preferably in a fluted pan. Then add brandy or whatever you have. Lovely lovely rich cake when cherries are added too! Thanks a stack! You certainly have enriched quite a few people with this recipe!

Ok, after reading multiple prior comments, I am going to choose this recipe this year! Tried one last year and despite feeding it rum and storing it for a while, it was still on the dry side. This is an amazing no fuss recipe. Tastes as good as the ones made with fruits soaked in rum for many months! I made this cake for someone's wedding anniversary and covered it with a layer of marzipan and a top layer of fondant! One of the best cakes I have ever made. Thank you Bincy Chris.
I made this cake with dried blueberries and cherries for my friend's birthday and sent it to her from Germany to Singapore. The cake made the journey wonderfully, I also used rum-soaked cheesecloths to wrap it before packing it. She said it's the best cake she's ever had in her life! Thank you Bincy I used preserved green figs in syrup and watermelon preserve and ginger preserve in place of dates and the cranberries and added dried citrus peel as well Ginger in fruitcake to me is a must . Also some almond essence . Just n teaspoon . You will have people swooning . I added a cup of brandy gently brushing it over the cake once out of the oven . 😋

Lovely recipe, I will try this as I always make a traditional UK Christmas cake. The only difference is that I will cover the top with lines of different dried fruits and nuts then brush again with glaze. Your cake serves 12 people, you cut a very generous slice, as it is very rich half that quantity would be more than enough.

Hi Bincy, I have been always wanted to try making your fruit cake. At last today I bake it. I replaced plain flour with gluten free flour, brown sugar with coconut sugar then I glazed it with orange glaze after bake. It turns out well… looks good… will keep this cake for Christmas Day. Once try, will update again… 😊

I’ve made this twice in the last week! My family loves it! First time I used an 8” pan and it turned out great however “fluffy”. Second time, I used a 5” pan and made two separate cakes. I also substituted the water for whole milk and it came out more dense which is exactly what I wanted! Thank you for such a delicious recipe!!

Hi Monica,you can either use dark brown sugar in place of mollases or caramelize 50-60g of regular white sugar and can be used in this recipe instead of mollases.

I had come upon your recipe before and wrote in in my recipe book but never tried it. This christmas for lack of time I followed your recipe...the cake is superb...I have saved a slice and am tasting it ...yes it has gotten Mellow and rich like old wine. Love this recipe! Try adding a tin of squashed pineapple to the first step. I also add twee teaspoons of bicarb to the flour mixture. Black pepper also adds to the flavour of this beautiful tasty cake! I bake it for 30 mins at 180, reduce to 150 to bake for another hour and a half. Then, if I want a darker colour, I'll bake it in a very slow oven for a few more hours, not forgetting brown paper or tinfoil on top. Btw, one can also bake this cake in the micro oven for 20 mins, preferably in a fluted pan. Then add brandy or whatever you have. Lovely lovely rich cake when cherries are added too! Thanks a stack! You certainly have enriched quite a few people with this recipe!

Ok, after reading multiple prior comments, I am going to choose this recipe this year! Tried one last year and despite feeding it rum and storing it for a while, it was still on the dry side. It tasted ok, but not what I was hoping for. This is a lot less work and looks superb and very moist! I'm in! Thank-you!

I made this cake with dried blueberries and cherries for my friend's birthday and sent it to her from Germany to Singapore. The cake made the journey wonderfully, I also used rum-soaked cheesecloths to wrap it before packing it. She said it's the best cake she's ever had in her life! This is a great recipe and I'm now known as the fruitcake expert, thanks to this video. I'm slowly converting people around me into fruitcake lovers, they all claim to hate fruitcakes before trying this one. During christmas I can't wait to bake several of these cakes to gift to people around me. Would be great if you can give me some pointers for a vegan version. I know the butter can be changed to margarine, but what about the eggs? Should I use apple sauce or flaxseed?

I used preserved green figs in syrup and watermelon preserve and ginger preserve in place of dates and the cranberries and added dried citrus peel as well Ginger in fruitcake to me is a must . Also some almond essence . Just n teaspoon . You will have people swooning . I added a cup of brandy gently brushing it over the cake once out of the oven . 😋

Lovely recipe, I will try this as I always make a traditional UK Christmas cake. The only difference is that I will cover the top with lines of different dried fruits and nuts then brush again with glaze. Your cake serves 12 people, you cut a very generous slice, as it is very rich half that quantity would be more than enough.

I replaced plain flour with gluten free flour, brown sugar with coconut sugar then I glazed it with orange glaze after bake.
It turns out well… looks good… will keep this cake for Christmas Day.

I’ve made this twice in the last week! My family loves it!
First time I used an 8” pan and it turned out great however “fluffy”.
Second time, I used a 5” pan and made two separate cakes. I also substituted the water for whole milk and it came out more dense which is exactly what I wanted!

Bincy, what can I use as a substitute for mollases to get d rich dark color fruit cake?
Hi Monica,you can either use dark brown sugar in place of mollases or caramelize 50-60g of regular white sugar and can be used in this recipe instead of mollases.
