She saw the opportunity and rushed ... she didn't go and have a consultation with someone that knows the business that she wanted in. She didn't even bother to make a research on her own, apparently, therefore she will have to face the consequences of her mistakes. Finally, I think she is a cooker but not a chef, as an ESSENCIAL part of Chef's training is food safety & handling.
If you have raw honey...raw honey can get bacteria easier when its with other ingredients. I use raw honey for drinks and such if your house temp goes up or the seal isn't right its makes it easier to get bacteria growth or mold than honey thats been cleaned or heated and you should refrigerate items that contain it especially after opening. Especially in heat/warmth.
I used to work in honey industry. Pure raw honey does not get bacteria. It's a broad-spectrum antimicrobial. That's why it requires no preservative and can remain edible almost indefinitely. But when raw honey is heated (pasturized) the living enzymes that made it an effective antimicrobial are destroyed, reducing the live superfood to a sad simple sugar. It's this dead sugar that becomes easy fuel for bacteria. The PASTURIZED honey is actually what you want to refrigerate after opening. Mold on your honey is a dead giveaway that its been pasturized or mixed with another ingredient, and I recomend throwing it out. Pasturized is a far inferior product. Big industry pasturizes because raw honey will crystallize and gum up the machines. They want honey to remain liquid and flow freely thru the machines and filters. But the result is a ruined product that doesn't live up to its health marketing. There are several tests you can do on a honey to see if it has been pasteurized or to confirm the presence of additives. Look them up. as someone who is doing graphic design in school, the labels she is using look really bad imo. like, they aren’t coherent at all, and she’s just throwing random colours that don’t mix onto a label. putting magenta with pastel pink with black and white is a big no no in my opinion. also, the magenta she uses for the logo and the magenta she uses on the label are two different shades of magenta. why would she and her “team” do that? i’m all up for supporting small businesses, but come on… at least make the labels look decent. that’s just my 2 cents worth tho. also i think it would’ve been better if she made the logo white, instead of magenta, that way the sauce’s colour could stand out more.
