    On occasion, I’ve made hybrid breads, using a SD starter and only a pinch of yeast. They made some of the best loaves. They say adding some instant yeast to a sourdough loaf doesn’t keep the same quality of the SD, maybe health wise, not sure. I know the purist or SD police don’t like it, but it is used in the industry and by the Pro’s. I just wonder what it takes away from a true sourdough, if anything? Thoughts?

      I think it only accelerates the process but for the purist it is more a matter of “purity” once you add anything else, like any other processed yeast then the final product is not acceptable to any purist.
